What is Buffalo Chicken?
Let’s get one thing cleared up once and for all—Buffalo chicken refers to Buffalo, New York, not buffalo the animal. Like so many other American classics, there are quite a few origin stories for Buffalo wings. Usually a little spicy, Buffalo wings are deep-fried without batter, then tossed in a sauce (classically based on Frank’s RedHot sauce and butter) and served with creamy blue cheese dressing and celery sticks for dipping and cooling off all that heat. This Buffalo chicken bites recipe is our favorite way to serve a riff on them at home, sans mess. You’ll definitely want to serve them alongside some of our other Super Bowl favorites come game day.

Chicken breasts
Salt & freshly cracked black pepper
Salted butter
Buffalo sauce, such as Frank’s Red Hot
Garlic powder & Onion powder
Serve with celery sticks and Blue Cheese Dressing
How to Make Buffalo Chicken Bites

Cook the cubed chicken breast pieces in a little olive oil, in a large skillet or two medium skillets until it’s cooked through and a little crisp on the outside.
Make Buffalo sauce! Just add your Frank’s RedHot Sauce (accept no substitute!), butter and spices to the chicken and stir with a wooden spoon until the Buffalo bites are fully coated in that neon red, tangy hot sauce.
Serve! With plenty of homemade blue cheese dressing, please, plus celery for a little crunchy freshness.

Buffalo chicken breast bites are a no skin, less saturated fat, no deep-frying and no bones version of our classic Baked Buffalo Wings recipe.
You’ll need 4 Chicken breasts to feed about 12 people as an appetizer, you can always cut this recipe in half to serve less people.
