Ideal for a game day snack, or an appetizer to enjoy with cocktails—serve something cooling to put out all that heat, like a nice margarita—this Buffalo chicken meatball recipe takes everything that’s great about Buffalo wings to a whole new level of snacking perfection. Serve a big bowl of these spicy Buffalo sauce-slicked nuggets of goodness alongside some crisp celery and blue cheese dressing for dipping (of course) and watch them disappear.

What’s In Buffalo Chicken Meatballs?

Our Buffalo chicken meatballs aren’t too different from a classic meatball recipe. As ever, our focus was making sure that we created a super tender, moist chicken meatball with loads of savory flavor. So, we’ve added an egg to ensure that the finished meatballs are plenty moist, and not one but two kinds of onion—grated fresh onion and powdered—to give them plenty of assertive punch.

How To Make Buffalo Chicken Meatballs

We’re not trying to be boastful here, but the thing is, we’ve sort of perfected the art of the meatball. You can, too! They’re pretty easy to make, once you know a few little tricks. And once you’ve got the hang of it, a whole world of savory, yummy, snack-or-supper meatball options will be open to you. Anyway, read on for all of our best meatball making tips!

  1. The best meatballs begin with the best ingredients. So start with fresh spices, good ground chicken, and so on.
  2. Next, the very best chicken meatballs require you to never, ever overmix your meatball mixture! When you combine all of the ingredients for the Buffalo chicken meatballs, mix the meat and seasonings only until the mixture begins to come together. Then stop mixing!
  3. Wet hands are your meatball rolling BFF. Keep a little bowl of water next to you while you roll the meatballs, and every so often, wet your palms. It’ll help keep the meatballs from sticking to your hands while you roll.

Buffalo Chicken Meatballs

Ingredients

  • 1 lb chicken, ground
  • ½ cup bread crumbs
  • 1 egg
  • 2 garlic cloves, minced
  • ¼ cup grated onion, liquid drained
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ cup buffalo sauce. plus more for serving
  • blue cheese dressing, for serving
  • celery, for serving

Method

  1. Heat oven to 400°F.
  2. Grate the onion in a food processor or with a cheese grater over a kitchen towel lined colander. Pick up the corners of the kitchen towel and squeeze out the onion juice. If you use a food processor, scoop out the grated onion onto a kitchen towel and squeeze out the onion juice over the sink.
  3. In a large bowl combine ground chicken, bread crumbs, eggs, garlic, grated onion, salt, garlic powder, onion powder and buffalo sauce until fully mixed.
  4. Using your hands form meatballs the size of golf balls, about 2 tablespoons each, and arrange on an oiled, rimmed baking sheet pan.
  5. Brush or spray the meatballs with olive oil.
  6. Bake for 25 minutes.
  7. Brush meatballs with remaining sauce and serve with Blue cheese dressing and celery.

*Makes 12 large meatballs.
