What is Buffalo Chicken?

Let’s get one thing cleared up once and for all—Buffalo chicken refers to Buffalo, New York, not buffalo the animal. Like so many other American classics, there are quite a few origin stories for Buffalo wings. Usually a little spicy, Buffalo wings are deep-fried without batter, then tossed in a sauce (classically based on Frank’s RedHot sauce and butter) and served with creamy blue cheese dressing and celery sticks for dipping and cooling off all that heat. This Buffalo chicken bites recipe is our favorite way to serve a riff on them at home, sans mess. You’ll definitely want to serve them alongside some of our other Super Bowl favorites come game day.

  • Buffalo sauce, such as Frank’s Red Hot

How to Make Buffalo Chicken Bites

Ultra-easy chicken breast recipes are a thing of beauty—great for people trying to follow a low-carb diet (including keto and Whole30), but delicious enough to make the whole crowd happy. Our Buffalo chicken bites recipe is simple and quick—no deep-frying mess, and no chicken wing bones to contend with. Buffalo chicken bites are as simple as:

  1. Cook the cubed chicken breast pieces in a little olive oil, in a large skillet or two medium skillets until it’s cooked through and a little crisp on the outside.

  2. Make Buffalo sauce! Just add your Frank’s RedHot Sauce (accept no substitute!), butter and spices to the chicken and stir with a wooden spoon until the Buffalo bites are fully coated in that neon red, tangy hot sauce.

  3. Serve! With plenty of homemade blue cheese dressing, please, plus celery for a little crunchy freshness.

How to Store Leftovers + Tips

  1. Buffalo chicken breast bites are a no skin, less saturated fat, no deep-frying and no bones version of our classic Baked Buffalo Wings recipe.

  2. You’ll need 4 Chicken breasts to feed about 12 people as an appetizer, you can always cut this recipe in half to serve less people.

Buffalo Chicken Bites

Ingredients

  • 4 chicken breasts, cut into 2-inch pieces (about 2½ pounds)
  • 1½ teaspoons kosher salt
  • ½ teaspoon freshly cracked black pepper (optional)
  • 4 tablespoons salted butter
  • 1 cup buffalo sauce, such as Frank’s Red Hot
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Celery ribs, cut into 3-inch pieces, for serving
  • Blue cheese dressing, store-bought or homemade, for serving

Method

  1. Season the chicken all over with the salt and pepper.

  2. Heat the olive oil in a large skillet over medium-high heat. Once the oil is glistening, working in batches, add the chicken and cook until the chicken is lightly browned 3-4 minutes. Turn and cook for another 3-4 minutes or until cooked through.

  3. Reduce the heat to low. Add the butter, buffalo sauce, garlic powder, and onion powder. Stir until each piece of chicken is coated in the buffalo sauce.

  4. Serve with celery sticks and blue cheese dressing on the side.
