They’re frozen, made in Italy and they’re a near-perfect dupe for potato gnocchi—tender, pillowy, fluffy, carb-y (but without the carbs!). Gluten-free, Whole30-approved, keto-friendly, nutritious and delicious, we are way, way into these perfect little gnocchi. So! We’ve rounded up our six favorite recipes that use cauliflower gnocchi. From gnocchi soup, to a cozy simmered gnocchi with vodka sauce, let’s get cooking!
1. Cauliflower Gnocchi Zuppa Toscana
It’s hard to say what people are more crazy for—Trader Joe’s cauliflower gnocchi, or the Olive Garden’s ‘Zuppa Toscana’. And really, why pick just one? Trader Joe's cauliflower gnocchi stands in for the usual potato gnocchi—this low-carb soup recipe has all of the cozyness and heft that you crave, minus the post-meal carb crash.
2. Mushroom Alfredo Cauliflower Gnocchi
Mushroom alfredo cauliflower gnocchi—sounds like a mouthful, but it comes together in minutes thanks to a recipe that relies on just three Trader Joe’s ingredients! Cooking the cauliflower gnocchi and the mushrooms at the same time is a particularly genius move, if we do say so ourselves.
3. Cauliflower Gnocchi with Bruschetta Sauce and Sausage
Inspired by classic Italian bruschetta topping—fresh, salted tomatoes, garlic, basil and lots of extra virgin olive oil—this bruschetta sauce is really fresh-tasting and delicious. We always grab a jar when we make a TJ’s run (along with about 10,000 bags of their frozen cauliflower gnocchi) and so this dinner recipe basically wrote itself. Finished with chicken sausage and fresh arugula, it’s a stunner of a 10-minute Trader Joe’s meal.
4. Vodka Sauce and Green Bean Cauliflower Gnocchi
The only thing more luxurious than gnocchi with vodka sauce for dinner is gnocchi with vodka sauce that comes together super quick! Three ingredients from Trader Joe’s and about ten minutes are all you need to get this simple, one-pan dinner on the table.
5. Brown Butter Sage Cauliflower Gnocchi
The heavenly combination of nutty brown butter and fresh sage is a classic gnocchi sauce that tastes absolutely divine on Trader Joe’s frozen cauliflower gnocchi. Cubed butternut squash adds autumnal color and a little extra nutrition, too.
