Trader Joe's cauliflower gnocchi stands in for the usual potato gnocchi—this low-carb soup recipe has all of the cozyness and heft that you crave, minus the post-meal carb crash. In other words (dare we say?) it’s even better than the Zuppa Toscana you’re used to.

How To Make Zuppa Toscana with TJ’s Cauliflower Gnocchi

We created this super easy, crazy fast cauliflower gnocchi soup recipe with the idea that you could get all of the ingredients in one go at Trader Joe’s! Note that this recipe serves two—if you’re feeding a whole hoard, though, don’t fret! It scales up with ease. Here’s how to make this Whole30-friendly Zuppa Toscana recipe:

  1. Cut the casings off your sausage, and give it a quick sauté. brown sausage.
  2. Zuppa time! Make the soup base by pouring in the broth.
  3. A quick simmer! About five minutes, just to let the flavors marry.
  4. Did we mention you don’t have to cook the cauliflower gnocchi? Just add it frozen to the simmering broth—it’ll cook in the soup!
  5. Cauliflower gnocchi is already a healthy choice, but we add a little kale at the end just to make this healthy soup even better. And you’re done!

Cauliflower Gnocchi Zuppa Toscana

Ingredients

  • 1 lb raw chicken Italian sausage (casing removed)
  • 2 cups chicken stock
  • 4 cups Italian kale, ribs removed, leaves roughly chopped
  • 1 bag frozen Trader Joe's cauliflower gnocchi
  • 1 tsp red pepper flakes
  • salt, to taste, about 1/2 tsp
  • grated Parmesan, optional

Method

  1. In a medium saucepan over medium heat, brown sausage, about 8 minutes. Drain off any excess fat.
  2. Add in the chicken broth and turn the heat to high. When the soup begins to boil, add in frozen gnocchi and simmer until the gnocchi is tender, about 5 minutes.
  3. Add in the chopped kale leaves and continue to cook until tender, about 2-3 minutes longer.
  4. Season to taste with salt. Serve with red pepper flakes. We also love this soup topped with grated parmesan if you have some on hand!

    I can’t find raw chicken sausage- can I used cooked? How to adapt?

    Hi Lauren! You can also just use regular Italian sausage if you can't find chicken Italian sausage.

    I tried TJ’s cauliflower gnocchi air-fried, pan-fried, boiled (like regular pasta), and oven-roasted but this is hands down the best recipe for it! It’s super easy and quick, and the texture & subtle flavor of the cauliflower gnocchi work perfect in this soup. I’ve made this with regular gnocchi before too, but I found them a little too chewy even after cooking longer. Thank you so much for the great recipe!

    I LOVE this soup. It's so tasty and easy! I make a few mods - I use ground turkey to make my own Italian meat, and I usually add about a cup extra chicken stock to add a little more liquid. But I definitely recommend this recipe.
