We created this super easy, crazy fast cauliflower gnocchi soup recipe with the idea that you could get all of the ingredients in one go at Trader Joe’s! Note that this recipe serves two—if you’re feeding a whole hoard, though, don’t fret! It scales up with ease. Here’s how to make this Whole30-friendly Zuppa Toscana recipe:
- Cut the casings off your sausage, and give it a quick sauté. brown sausage.
- Zuppa time! Make the soup base by pouring in the broth.
- A quick simmer! About five minutes, just to let the flavors marry.
- Did we mention you don’t have to cook the cauliflower gnocchi? Just add it frozen to the simmering broth—it’ll cook in the soup!
- Cauliflower gnocchi is already a healthy choice, but we add a little kale at the end just to make this healthy soup even better. And you’re done!
