How To Make Gnocchi Alfredo with Mushrooms

Trader Joe’s cauliflower gnocchi comes frozen, but is really quick to cook—no defrosting required. This easy cauliflower gnocchi recipe comes together in about ten minutes. Here’s how it works:

  1. Sauté the mushrooms and the frozen cauliflower gnocchi together in a little olive oil until they're warmed through and both beginning to brown a bit.
  2. Pour in the sauce! Stir Mushroom Medley Alfredo Sauce, and let the whole pan simmer gently to meld the flavors.
  3. Eat up! That's it! Dinner is done.

Mushroom Alfredo Cauliflower Gnocchi

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 pound sliced cremini mushrooms
  • 12 ounces cauliflower gnocchi, we like Trader Joe’s
  • 1 (15 ounce) jar mushroom alfredo sauce (or regular alfredo sauce)
  • 2 to 3 cups fresh baby spinach

Method

  1. Heat the olive oil in a medium skillet over medium heat. Once the oil is glistening, add the mushrooms and gnocchi and cook, stirring occasionally, until the mushrooms have softened and started to brown and the gnocchi is warmed through and starting to crisp, 6 to 8 minutes.

  2. Stir in the alfredo sauce and bring to a low simmer. Once simmering, add the spinach and cook, stirring, until wilted, about 4-5 minutes, serve warm.

    I'm not a big fan of TJ's cauliflower gnocchi (sorry!) - it is just too gummy. If I wanted to use regular gnocchi instead, how would the preparation change?

    We haven't tested with regular gnocchi, it should work the same though. Hope you enjoy Lisa!
