Mushroom Alfredo Cauliflower Gnocchi

Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 pound sliced cremini mushrooms
- 12 ounces cauliflower gnocchi, we like Trader Joe’s
- 1 (15 ounce) jar mushroom alfredo sauce (or regular alfredo sauce)
- 2 to 3 cups fresh baby spinach
Method
Heat the olive oil in a medium skillet over medium heat. Once the oil is glistening, add the mushrooms and gnocchi and cook, stirring occasionally, until the mushrooms have softened and started to brown and the gnocchi is warmed through and starting to crisp, 6 to 8 minutes.
Stir in the alfredo sauce and bring to a low simmer. Once simmering, add the spinach and cook, stirring, until wilted, about 4-5 minutes, serve warm.
