Cauliflower gnocchi with bruschetta sauce and sausage is a low-carb supper that bursts with bright, bold flavors and comes together in under ten minutes.

Fellow Trader Joe’s cauliflower gnocchi lovers, please make yourself right at home! We cannot get enough of these tender little pillows of low-carb goodness. We like to pair them with TJ’s bruschetta sauce, which claims to be a “topping”—but we think actually makes a really nice pasta sauce. Loaded with fresh basil and garlic, it makes a super fresh, bright-tasting sauce for a big, easy skillet dinner of cauliflower gnocchi with sausage and arugula.

Trader Joe’s Bruschetta Sauce to the Rescue! 

Inspired by the classic Italian bruschetta topping—fresh, salted tomatoes, garlic, basil and lots of extra virgin olive oil—this sauce is fresh and delicious. We always grab a jar when we make a TJ’s run (along with about 10,000 bags of their frozen cauliflower gnocchi) and so this dinner recipe basically wrote itself—they were a no-brainer pairing. Here’s how to make it: 

  1. Sauté the frozen gnocchi in a skillet along with the sliced Italian chicken sausage. Both should brown at roughly the same rate. 
  2. When the gnocchi is warmed through, add the bruscetta! 
  3. Simmer a little and then fold in the arugula. It’ll get a little wilty, and that’s exactly what you want! 
  4. Done! That’s it, my friends. Time to dig in.

Any of these could be made with regular potato gnocchi. But then again, now that cauliflower gnocchi exists (and is delicious) we’re not sure why you would want to.

Cauliflower Gnocchi with Bruschetta Sauce and Sausage

Serves 2

Ingredients

1 package Trader Joe's Cauliflower Gnocchi
1 jar Trader Joe's Bruschetta Sauce
1 package Italian chicken sausage, cut into 1/2" slices
2 cups fresh arugula
1 tbsp olive oil

Method

In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken sausage and frozen cauliflower gnocchi and cook until both begin to brown. Add the Trader Joe’s bruschetta and bring everything to a low simmer. Allow to cook for 2-3 minutes. Stir in the fresh arugula and serve.
