Cauliflower Gnocchi with Bruschetta Sauce and Sausage

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 (12-ounce) package Italian chicken sausage, 4 links, cut into ½-inch rounds
- 1 (12-ounce) package Trader Joe's cauliflower gnocchi (frozen)
- 1 (9-12-ounce) jar bruschetta
- 2 cups arugula
- Freshly grated Parmesan cheese, for serving (optional)
- Freshly cracked black pepper, for serving (optional)
Method
In a large skillet, heat the olive oil over medium-high heat. Once the oil is glistening, add the sliced chicken sausage and frozen cauliflower gnocchi and cook until both begin to brown, about 5 minutes.
Stir in the bruschetta and bring to a simmer. Cook, stirring occasionally, until the gnocchi is tender and warmed through, about 2-3 minutes. Remove from heat and stir in arugula.
Divide between bowls and serve topped with Parmesan and pepper, if using.
