This Easy Corn Dip Recipe Wins Big
Made with mayo, sour cream, cream cheese and not one but two kinds of cheese, this hot corn dip recipe (which the internet sometimes calls “crack corn dip,”) is the Super Bowl recipe that has lingered in our hearts and minds and may just need to become a year-round go-to. If you love Elote (Mexican Street Corn) — how the mayo and spice and corn all play so nicely together — you’re going to be head over heels for this hearty, cheesy Mexican corn dip recipe. Corn Dip Ingredients
Salted butter
Red onion
Jalapeño (We love the subtle heat this gives the hot corn dip, but if you’re sensitive to spice or want to make sure this dip is super kid-friendly, it’s fine to just leave it out.)
Garlic
Canned Mexicorn (also sometimes labeled “southwest corn” or “fiesta corn,” this is a mix of corn kernels, and red and green bell peppers.)
Cheddar cheese
Monterey Jack or mozzarella cheese (Jack cheese might be our preference, but really either is fine)
Cream cheese
Sour cream
Mayonnaise
Canned green chilies
Sea salt
Sugar
Chili powder
How To Make Corn Dip AKA The Ultimate Party Dip
Cook the onions, jalapeño and garlic in butter in a large cast-iron or ovenproof skillet.
Slowly stir in the drained corn, cheeses, sour cream, mayo, green chilies, and seasonings. A silicone spatula is our favorite tool for this.
Sprinkle the top with even more cheese.
Bake for 30 minutes, or until the cheese is golden and bubbly.
Serve! With scoopable chips that can hold up to this seriously dense party dip.
How To Store Corn Dip + Tips
We don’t recommend freezing corn dip leftovers. However, you probably won’t have any leftovers because it’s so darn delicious. If you magically do have leftovers, they’ll keep in the fridge for up to 3 days.
Pre-shredded cheese is totally fine to use, but if you have time, it’s better to shred the cheeses yourself. It gives the dip a slightly creamier, smoother texture.
Fritos Scoops are our favorite chip to serve with corn dip, but any sturdy tortilla chip will do fine. Just no paper-thin tortilla chips, they will not hold up to the scoopable glory that his this hearty hot corn dip.
