How to Make The Best Baked Brie Recipe

  1. Roll out the pastry with a rolling pin until it's large enough to wrap your entire wheel of brie.

  2. On a baking sheet, set the brie in the middle of the pastry.

  3. Top it with all of the goodies. Some people like to top baked brie with jam, but we prefer this sweet-savory-crunchy combo of pecans, brown sugar and cracked pepper. It's festive, not too sweet, and very crowd-pleasing.

  4. Brush on an egg wash with a pastry brush, so the pastry gets all shiny and golden as it bakes.

  5. Bake! Until the pastry is cooked and toasty, and the brie is absolutely oozing.

How to Store Leftovers + Tips

  • What to serve with baked brie: Fresh fruit, toasted baguette slices, dried fruit, plain water crackers, jam, mixed nuts

  • Serve with our Classic Cranberry Sauce on the side, or baked into the pastry.

  • Make ahead: To prep this ahead of time follow the directions through step 3 and place it in the fridge. When ready to bake, follow steps 4-5.

  • Reheat leftovers in a 350°F oven for 10-15 minutes or in the microwave for about 10-15 seconds, until spreadable again.

  • Do you take the rind off brie before baking? No! Brie has a soft, bloomy rind that is completely edible. You can cut it off if you are averse to cheese rind.

Baked Brie

  • Serves: 8
  • Prep Time:  10 min
  • Cook Time:  35 min
  • Calories: 147

Ingredients

  • 1 16-ounce wheel of brie cheese (see Note 1)
  • 1 sheet frozen puff pastry, thawed (see Note 2)
  • ¼ cup roughly chopped pecans
  • ½ teaspoon freshly cracked black pepper
  • 2 tablespoons dark brown sugar
  • 1 egg
  • Crackers, for serving (optional)
  • Apple slices, for serving (optional)

Method

  1. Preheat the oven to 400°F with a rack in the center position. Grease a pie plate or rimmed sheet pan.

  2. Roll out puff pastry: On a lightly floured surface, roll out the puff pastry into an 11×11 inch square.

  3. Place the puff pastry in the prepared pie plate. Add the brie to the center of the puff pastry, then top the brie with pecans, brown sugar, and black pepper. Carefully fold the corners of the pastry over the brie, pinching the edges together to seal.

  4. In a small bowl, beat the egg with 2 tablespoons of water. Brush the pastry all over, being sure to get the sides.

  5. Bake until the pastry is a deep golden brown, 35 to 40 minutes. Serve warm with crackers or apples, if using.

Notes:

  1. This recipe will work with any size wheel of brie cheese up to 21 ounces.

  2. Frozen puff pastry takes 30-40 minutes to thaw.

A good wine for a baked Brie? The best cracker?

If you like red wine cabernet sauvignon or pinot noir would be good. If you prefer a white wine you could go chardonnay or sauvignon blanc. As for crackers most anything goes with brie we like a melba, plain water crackers or sesame seed crackers. Hope you enjoy Alice!
