Almond Butter Toast With Bananas And Toasted Coconut

A few weeks ago a friend emailed, asking for us to share our top dinner recommendations. Our best ‘go-to’ prep-ahead meals. She and her family are in the process of moving and she said she was feeling “totally uninspired in the kitchen.” 


...drizzled it with raw honey, sprinkled it with toasted coconut and flaky sea salt and sat down to eat.

Stumped. How is it that we dream about food, spend our days menu planning and catering and we are stumped at how to reply to this message? We’ve all been there, even food bloggers. Some days we have a weeks worth of dinner ideas come to us and we purchase, prep and store every ingredient that very same day. Other days we find ourselves thinking what have we been eating over the last 2 weeks? I can’t even remember what I put on the dinner table the night before last. Sad, but true.

Although we’ve considered coming up with a blog entry on dinner ideas, this is not that post. Maybe at a later time. Instead we want to encourage you for the times you may be feeling the same way. Uninspired. During these times, try not to think too hard. These are the days that a rotisserie chicken a loaf of bread and some humble steamed veggies come in handy. And maybe this toast. The day we posted the photo of this toast on Instagram we had one friend reply “I made this for dinner. Sooo good. Love Maldon salt!”

See? Without even overthinking it, or stressing out she took a simple thing like bread, spread some almond butter on it and topped it with sliced banana, drizzled it with honey, sprinkled it with toasted coconut and flaky sea salt and sat down to eat. We hope you will too.

Almond Butter Toast With Bananas And Toasted Coconut

Serves 2

Ingredients

2 thick slices of bread
1/2 cup almond butter
1 medium banana
2 tbsp honey
1/4 cup toasted coconut
1/2 tsp flaky maldon salt

Method

Toast 2 slices of bread. Divide almond butter and then bananas between the 2 pieces of toast. Drizzle each slice with 1 tablespoon honey, sprinkle with toasted coconut and flaky salt.
