A good old-fashioned meatloaf dinner—mini meatloaves, potatoes and broccoli—all on one pan? Yep! It’s that sheet pan magic, at it again!

Sheet Pan...Meatloaf?! Yep, Sheet Pan Meatloaf!

A little tinkering and we swear, almost any recipe you love and become a sheet pan recipe! In other words, most any recipe you love can be made even easier. Turns out, meatloaf is one of those wonderful recipes that takes really well to the sheet pan dinner treatment! No, you don’t need to cram six tiny mini-loaf pans onto a sheet pan. You’ll free-form the ground beef meatloaf mixture into individual meatloaf ovals and they’ll bake right on the pan along with broccoli and potatoes. A whole meatloaf meal on one pan? Yeah, at the end of a long day, this easy meatloaf meal feels downright miraculous.

Sheet Pan Meatloaf Ingredients

Broccoli, potatoes and meatloaf, all roasting together on one pan—this sheet pan dinner recipe is as easy as it sounds. And you might even have all of these super basic ingredients around the house already! If you don’t, it won’t be a goose chase to find them. Here’s everything you’ll need to make this mini meatloaf dinner:

  • Meat! Ground chuck, ground pork
  • Spices! Italian seasoning, salt, black pepper, garlic powder, onion powder
  • Bread crumbs
  • Eggs
  • Whole milk
  • Ketchup
  • Brown sugar
  • Worcestershire sauce
  • Broccoli
  • Baby potatoes
  • Extra virgin olive oil

3 Reasons This Mini Meatloaf Sheet Pan Recipe Rules

  • Because the meatloafs are small, it’s easier to keep them nice and moist!
  • Our secret ingredient? Ketchup. Not only is it a source of moisture, ketchup is an ingredient that brings a disproportionate amount of flavorful goodness to meatloaf. We mix it into the ground beef mixture, and use it as a sweet-savory-tangy base for the sauce that tops the meatloaves, too.
  • Our second secret ingredient—we can have two, right?—ground pork! Get a little extra richness and flavor into your mini meatloaves by folding some ground pork into the meat mixture. It’s a serious upgrade.

How To Make Sheet Pan Meatloaf and Potatoes

  1. Make the meatloaf mixture by combining all of the meatloaf ingredients. Be sure to whisk the eggs thoroughly before adding them. If you have a stand mixer, it’ll make mixing the meatloaf mixture extra easy (and less messy) otherwise, a good old mixing bowl + mixing spoon + elbow grease will do the job!
  2. Make a sauce for the meatloaf by mixing ketchup, brown sugar, Worcestershire sauce and a bit of water.
  3. Toss broccoli and potatoes with a little oil and salt on the sheet pan.
  4. Shape the ground beef mixture into six little mini meatloaves, then nestle them between the broccoli and potatoes on the sheet pan.
  5. Brush the sauce all over the meatloaves.
  6. Bake! Check for doneness after 30 minutes by checking the internal temperature of the meatloaves. You’re looking for 160°F on an instant read thermometer.

Ingredients

  • 1 pound Ground beef, 80/20
  • 1/2 pound Ground pork
  • 3/4 cup Bread crumbs
  • 2 Large eggs, beaten
  • 3/4 cup Whole milk
  • 2 tsp Sea salt
  • 1 tsp Italian seasoning
  • 1/4 tsp Ground black pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/4 cup Ketchup
  • 2 Tbsp Brown sugar
  • 2 tsp Worcestershire sauce
  • 1 tsp Water
  • ½-3/4 lb Broccoli, florets
  • ½-3/4 lb Baby potatoes, halved
  • 2 Tbsp Extra virgin olive oil

Method

  1. Preheat the oven to 350°F.
  2. Grease a large rimmed baking sheet, set aside.
  3. In a large bowl mix together the ground beef, pork and breadcrumbs until fully combined.
  4. In a medium-sized bowl, whisk the eggs together with the milk, 1 1/4 teaspoon salt, Italian seasoning, pepper, garlic powder, and onion powder.
  5. Stir the whisked egg mixture, and 3 tablespoons ketchup into the meat, until fully combined. Use a stand mixer for this step if you have one.
  6. In a small bowl mix together the remaining 1 tablespoon ketchup, brown sugar, Worcestershire sauce and water until fully combined.
  7. Place the broccoli and potatoes on the baking sheet and drizzle with olive oil and remaining 3/4 teaspoon salt. Toss to coat evenly and spread it all out on the baking sheet. Divide the meat into 6 pieces and create an oval about 4” by 3”. Nestle them between the broccoli and potatoes.
  8. Using a pastry brush, brush the brown sugar sauce over the tops of the meatloaves.
  9. Bake in the oven for 30 minutes until the internal temperature of the meatloaf registers 160°F with an instant read thermometer.

    Loved the meatloaf but the potatoes were no where near done at 35 min. I left them in at 350 for another 25 min (personally could of gone over an hour) I would suggest starting the potatoes early! But the meatloaf itself was really good and perfect at 30 min!

    Great to hear that you loved the meatloaf! Do you mind if I ask what kind of potatoes you used? And did you cut them in half? These baby potatoes, cut in half would be complete mush if they were left in the oven for an hour! That is way too long. This recipe has been tested numerous times with baby red potatoes and for us, they have turned out perfectly tender every time. : ) Hope you are able to try it again soon.

    This was terrific - such a great way to combine some of our favorites in one simple sheet pan. I cooked it on the Traeger so everything had a nice smoky hint. My 13 y/o declared that he wasn't going to eat it because he doesn't like meatloaf (though it's been years since I've made any). He went back for seconds!! Modern Proper for the win!!!

    Turned out great! I forgot to halve the potatoes, so they didn’t finish cooking at the same time. Mini meatloaves were moist and delicious.
