A little tinkering and we swear, almost any recipe you love can become a sheet pan recipe! In other words, most any recipe you love can be made even easier. Turns out, meatloaf is one of those wonderful recipes that takes really well to the sheet pan dinner treatment! No, you don’t need to cram six tiny mini-loaf pans onto a sheet pan. You’ll free-form the ground beef meatloaf mixture into individual meatloaf ovals and they’ll bake right on the pan along with broccoli and potatoes. Serve with Roasted Asparagus & Roasted Garlic Mashed Potatoes.

Sheet Pan Meatloaf Ingredients

Broccoli, potatoes and meatloaf, all roasting together on one pan—this sheet pan dinner recipe is as easy as it sounds. Here’s everything you’ll need to make this mini meatloaf dinner:

  • Meat! Ground chuck, ground pork
  • Spices! Italian seasoning, salt, black pepper, garlic powder, onion powder
  • Bread crumbs
  • Eggs
  • Whole milk
  • Ketchup
  • Brown sugar
  • Worcestershire sauce
  • Broccoli
  • Baby potatoes
  • Extra virgin olive oil

3 Reasons This Mini Meatloaf Sheet Pan Recipe Rules

  • Because the meatloafs are small, it’s easier to keep them nice and moist!
  • Our secret ingredient? Ketchup. Not only is it a source of moisture, ketchup is an ingredient that brings a disproportionate amount of flavorful goodness to meatloaf. We mix it into the ground beef mixture, and use it as a sweet-savory-tangy base for the sauce that tops the meatloaves, too.
  • Our second secret ingredient—we can have two, right?—ground pork! Get a little extra richness and flavor into your mini meatloaves by folding some ground pork into the meat mixture. It’s a serious upgrade.

How To Make Sheet Pan Meatloaf and Potatoes

  1. Pop the Potatoes in the oven!
  2. Make the meatloaf mixture by combining all of the meatloaf ingredients. Be sure to whisk the eggs thoroughly before adding them. If you have a stand mixer, it’ll make mixing the meatloaf mixture extra easy (and less messy) otherwise, a good old mixing bowl + mixing spoon + elbow grease will do the job!
  3. Make a sauce for the meatloaf by mixing ketchup, brown sugar, Worcestershire sauce and a bit of water.
  4. Toss broccoli with a little oil and salt and add it to the sheet pan!
  5. Shape the ground beef mixture into six little mini meatloaves, then nestle them between the broccoli and potatoes on the sheet pan.
  6. Brush the sauce all over the meatloaves.
  7. Bake! Check for doneness after 30 minutes by checking the internal temperature of the meatloaves. You’re looking for 165°F on an instant read thermometer.

Mini Italian-Style Meatloaf Sheet Pan

Ingredients

  • ¾ pound baby Yukon gold potatoes, halved, (about 1-inch pieces)
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons sea salt
  • ½ pound broccoli, florets
  • 2 large eggs
  • ¾ cup whole milk
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon freshly cracked black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound ground beef, 80/20
  • ½ pound ground pork
  • ¾ cup bread crumbs
  • 4 tablespoons ketchup
  • 2 tablespoon brown sugar
  • 2 teaspoon Worcestershire sauce
  • 1 teaspoon water

Method

  1. In a large bowl combine the potatoes, 2 tablespoons olive oil and ¾ teaspoon of salt. Spread the potatoes, flesh side down in a single layer on a large rimmed sheet pan. Place the potatoes in a cold oven and set the temperature to 350°F. Set the timer for 20 minutes.

  2. Meanwhile, add the broccoli to the same bowl used for the potatoes and drizzle with the remaining 1 tablespoon olive oil, sprinkle with ¼ teaspoon of the salt, toss to coat.

  3. In a second large bowl whisk together the eggs, milk, remaining 1 teaspoon salt, Italian seasoning, pepper, garlic powder, and onion powder. Add the ground beef, pork, bread crumbs and 3 tablespoons of the ketchup and mix until fully combined.

  4. In a small bowl mix together the remaining 1 tablespoon ketchup, worcestershire, brown sugar and water.

  5. Divide the meat into 6 pieces and shape each into an oval, roughly 4-inches by 3-inches. Remove the potatoes from the oven and stir them. Add the meatloaves and broccoli to the sheet pan.

  6. Using a pastry brush, brush the brown sugar sauce over the tops of the meatloaves.

  7. Roast in the oven until the internal temperature of the meatloaf registers 165°F with an instant-read thermometer and the potatoes and broccoli are tender, about 30 minutes.

    Hey, I was wondering if this could be made into a freezer meal? We love this meal but our lives are incredibly busy so having it as a freezer meal would be very beneficial

    It hasn't been tested, so I'm reluctant to give exact instructions, but I'm sure it could! I would bake the meatloaf alone and then boil the broccoli for 2 minutes. Flash freeze it all separate and then add to an airtight zip bag. When ready to eat it bake at 400 for 20-25 minutes. Add the sauce separately.

    Do you think the timing would be the same if I used Brussel Sprouts instead of Broccoli? Or would they need longer in the oven to get crisp?

    They roast at relatively the same amount of time so it should be ok. Poke them with a fork to make sure they are soft enough to your liking before taking them out of the oven.

    The way I love this meatloaf! We do make the sauce a little differently. We do more ketchup, skip the sugar and add in some yellow mustard but these are just our preferences. We've also used gluten free breadcrumbs and it works beautifully!
