    The Name Says It All - Cheesy Corn Casserole Recipe

    This recipe doesn’t hold anything back. It’s cheesy and full of corn three ways–featuring cornmeal, whole kernels of corn, and creamed corn. What goes best with corn? Butter! In addition to corn and butter this easy corn casserole with cheese calls for a couple of eggs to hold it all together, and sour cream for moisture, and a teeny bit of sugar to balance it all out.     We’ll say it, sometimes opening a can of corn is the most we can do for a dinner side dish. When we have a little extra time to spare, we like to bake up this easy corn casserole with cheese. It requires a little measuring, a little mixing, and a little baking to bring this tasty side dish tableside, but we definitely think it’s worth it. Short on prep time (about ten minutes before you put it in the oven) and long on serving size (we can manage twelve portions if we’re not sneaking any bites before it hits the table) this casserole is a real dinner winner!

    How To Make The Most Scoop-Worthy Cheesy Corn Casserole

    1. Preheat the oven to 350°F.

    2. Mix dry ingredients in a large bowl. Did you know you can make this cheesy corn casserole without jiffy? Just whisk flour, cornmeal, sugar, salt and baking powder until combined.

    3. Do you put eggs in corn casserole? Yes! Just like in a cake, eggs add a fluffy texture and hold everything together. Mix butter, eggs, creamed corn, whole corn, sour cream and cheese into the dry ingredients.

    4. Pour the batter into a greased baking dish and bake for 35-40 minutes until set and golden perfection has been achieved.

    5. Serve this casserole by the spoonful while it’s still warm.

    Cheesy corn casserole is a great addition to a holiday celebration table, and we love to serve it alongside other casserole favorites like Green Bean Casserole, Sweet Potato Casserole with Marshmallows and Pecan Streusel, and One Pot Chicken Stuffing Casserole.       Ingredients

      • 1¼ cups all-purpose flour
      • ¾ cup yellow cornmeal
      • ¼ cup sugar
      • 1 teaspoon sea salt
      • ½ teaspoon baking powder
      • ¾ cup unsalted butter, melted, plus more for baking dish
      • 2 large eggs
      • 1 (14.75 ounce) can creamed corn
      • 1 (15 ounce) can whole kernel corn, drained
      • 1¼ cup sour cream
      • 1½ cups shredded cheddar cheese

      Method

      1. Preheat the oven to 350°F with a rack in the center position. Lightly grease a 9x13 baking dish with butter or cooking spray.
      2. In a large bowl combine the flour, cornmeal, sugar, salt and baking powder.
      3. Stir in the melted butter, eggs, creamed corn, whole corn, sour cream and cheese, until combined. Pour the batter into the prepared baking dish.
      4. Bake until set in the center and lightly browned on the edges, 35-40 minutes. Serve warm.

        What is the best way to warm this up after cooking? I made this morning for Thanksgiving but am not serving until 3.

        Sorry we missed this in time, hope it all worked out Kate. For future we'd cover with foil and reheat in the oven on 350 for about 10 minute or until warmed through.

        Could you use full fat Greek yogurt instead of sour cream?

        We haven't tried it before but we think it should work ok!

        Does this recipe freeze well? I was thinking of splitting the recipe between two casserole dishes and freezing one for later.

        Can you make this ahead and cook the next day?

        That might mess with the consistency. We'd reccomend fully cooking it then reheating the next day.

        Do you have any make-ahead tips on this dish for a big meal like Thanksgiving where the turkey needs the oven? For example, does the casserole reheat well? Or could I make the batter, and store the unbaked casserole in the fridge til bake time?

        We'd bake it ahead of time and give it a little reheat when ready to eat!
