Cheesy Corn Casserole

Ingredients

  • 1¼ cups all-purpose flour
  • ¾ cup yellow cornmeal
  • ¼ cup sugar
  • 1 teaspoon sea salt
  • ½ teaspoon baking powder
  • ¾ cup unsalted butter, melted, plus more for baking dish
  • 2 large eggs
  • 1 (14.75 ounce) can creamed corn
  • 1 (15 ounce) can whole kernel corn, drained
  • 1¼ cup sour cream
  • 1½ cups shredded cheddar cheese

Method

  1. Preheat the oven to 350°F with a rack in the center position. Lightly grease a 9x13 baking dish with butter or cooking spray.
  2. In a large bowl combine the flour, cornmeal, sugar, salt and baking powder.
  3. Stir in the melted butter, eggs, creamed corn, whole corn, sour cream and cheese, until combined. Pour the batter into the prepared baking dish.
  4. Bake until set in the center and lightly browned on the edges, 35-40 minutes. Serve warm.
