Ingredients For A Healthier Take on Sweet Potato Casserole.

This sweet potato casserole calls for all the good stuff. You might even have a lot of these ingredients on hand already! This dish is also dairy-free, gluten-free and vegan!

  • Coconut oil (we like Nature's Way)

  • Cinnamon

  • Ground nutmeg

  • Kosher salt

  • Sweet potatoes

  • Pumpkin seeds

  • Candied ginger

  • Dried cranberries

  • Chopped pecans

  • Maple syrup

How to Make a Healthier Version of Sweet Potato Casserole.

  1. Preheat the oven and prepare the baking dish.

  2. Mix the coconut oil, cinnamon, nutmeg, salt and sweet potato slices together in a large bowl.

  3. Arrange the sweet potatoes in the baking dish. Sprinkle with all the goodies: pumpkin seeds, ginger, cranberries, and pecans, tucking some of the ingredients between slices.

  4. Drizzle with maple syrup!

  5. Bake until tender and golden brown.

Ingredients

  • ½ cup coconut oil, melted (we like Nature's way), plus more for greasing
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon kosher salt
  • 5 large sweet potatoes, peeled and sliced into ⅛-inch thick rounds (about 2½ pounds)
  • ¼ cup pumpkin seeds
  • ¼ cup candied ginger
  • ¼ cup dried cranberries
  • ½ cup chopped pecans
  • ¼ cup maple syrup

Method

  1. Preheat the oven to 375°F with a rack in the center position. Grease a 9 x 13-inch baking dish with coconut oil.

  2. In a large bowl, combine the coconut oil, cinnamon, nutmeg, and salt. Add sweet potato slices and toss to coat.

  3. Arrange the sweet potatoes in stacks. Place the stacks on their side, and place them in the prepared baking dish, filling the pan. Sprinkle all over with the pumpkin seeds, ginger, cranberries, and pecans, tucking some of the ingredients between slices. Drizzle with maple syrup.

  4. Bake until the sweet potatoes are tender and golden brown, 50-60 minutes, covering the baking dish with foil if the potatoes are browning too quickly.


Note: If you have one, use a mandolin to get those even, thin slices!
