Italian kale, ribs removed, leaves roughly chopped

bag frozen Trader Joe's cauliflower gnocchi
1 tsp
red pepper flakes
salt, to taste, about 1/2 tsp
grated Parmesan, optional
Method
In a medium saucepan over medium heat, brown sausage, about 8 minutes. Drain off any excess fat.
Add in the chicken broth and turn the heat to high. When the soup begins to boil, add in frozen gnocchi and simmer until the gnocchi is tender, about 5 minutes.
Add in the chopped kale leaves and continue to cook until tender, about 2-3 minutes longer.
Season to taste with salt. Serve with red pepper flakes. We also love this soup topped with grated parmesan if you have some on hand!
