4 cups
loosely packed stemmed and roughly chopped lacinato kale
1 (12-ounce) bag
frozen cauliflower gnocchi, (we like Trader Joe’s)
Method
Heat a large saucepan over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until browned, 6 minutes.
Add the chicken stock, salt, and red pepper flakes. Bring to a simmer. Stir in the gnocchi and kale and simmer until the kale is wilted and the gnocchi is tender, about 5 more minutes.
