Cauliflower Gnocchi Zuppa Toscana

Ingredients

  • 1 pound Italian chicken sausage, casings removed
  • 2 cups chicken stock
  • 1 teaspoon kosher salt
  • 1 teaspoon red pepper flakes
  • 4 cups loosely packed stemmed and roughly chopped lacinato kale
  • 1 (12-ounce) bag frozen cauliflower gnocchi, (we like Trader Joe’s)

Method

  1. Heat a large saucepan over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until browned, 6 minutes. 
  2. Add the chicken stock, salt, and red pepper flakes. Bring to a simmer. Stir in the gnocchi and kale and simmer until the kale is wilted and the gnocchi is tender, about 5 more minutes.
  3. Ladle the soup into bowls.
