We all have those moments in our lives that stand out as great personal achievements. These are the times where we reached deep, worked hard, and accomplished something truly great. The labors and births of my three kids and starting my own business stand out as a couple of mine. Also, discovering the brilliance of this pomodoro (tomato in Italian) sauce. Yeah, easily.

Three Ingredient Tomato Sauce

So what’s so good about this sauce? Well, in short, just about everything. Oil, salt, tomatoes, and time are all it takes to create the most vibrant tomato sauce you’ve likely ever tasted. The first time I made it I used fresh heirlooms from my garden. I was so impressed with the results, but also a bit nervous that the only reason it tasted so good was because of the high quality of tomatoes. I was hoping to prove myself wrong, so the next day I ran to the supermarket and bought the most ordinary roma tomatoes I could find. I once again made the sauce, this time without the benefit of garden-fresh tomatoes, and much to my surprise was completely blown away. Every bit of intense tomatoey-sweetness that I loved about the initial batch was still there. You seriously can’t go wrong with this sauce. It will be good no matter what, it just can’t help itself.  

Since discovering the brilliance of this pomodoro sauce, I have made it several times over and keep finding new uses for it. I’ve made a few large batches and frozen small, ready to defrost portions for use on pizza with fresh mozzarella, in place of canned tomatoes in soups and stews, and (my favorite use) on homemade pasta with a generous heap of grated parm. So simple, but just the epitome of delicious.

Bright, bold, and oh so sweet, this pomodoro sauce will have you forgetting why you ever bothered with anything from a jar. In the end, I don’t think I can really count this sauce as one of my greatest achievements, because despite how absolutely incredible and genius it is, it takes zero effort or skill to produce (so totally unlike those births and that business). I will however, take all the credit when I serve it to others and they rave about how delicious it is and how impressed they are that I had the time to make homemade sauce, and I may just keep how easy it was to make to myself.

Serves 4

Ingredients

4 lbs ripe tomatoes, preferably roma, stem and core removed
1 cup olive oil
2 tsp salt
fresh basil (optional)

Method

In a large pot add all ingredients over medium/low heat. Once bubbling start smashing tomatoes with the back of a spoon to help them break down. Allow to cook for 30 minutes, stirring often to avoid scorching. Sauce should be a thick sauce. If it is too thin continue cooking for a few more minutes. If you're planning on adding fresh basil, throw 3-5 leaves into the pot. I prefer to roughly blend mine with a hand wand once finished, but that is optional. Store in an air tight container for up to a week or for future use. 

The best way to serve it is tossed with al dente pasta and lots of fresh parmesan cheese.
