Let’s talk tacos! Our delicious roasted cauliflower taco recipe with tangy avocado cream is easy, healthy, ready in 30 minutes and is a perfect vegetarian dinner! Ideal for taco Tuesday, or any day!

Vegetarian Cauliflower Tacos Everyone Will Love.

We eat a LOT of tacos in our house and this easy roasted cauliflower taco recipe is our current favorite. The other day I was making steak for dinner and my kid started making guacamole and warming up tortillas. When I asked why he was making such an elaborate snack while I was making a full dinner, he said, “Mom, we can turn what you’re making into a taco recipe. It’ll be so much better.” That’s my kind of kid! And he’s right!

Everything is better in a warm tortilla and paired with avocado, which is why I’m obsessed with this roasted cauliflower taco recipe. Homemade taco seasoning makes the cauliflower extra smoky and delicious, and this avocado crema will have you swooning. Cauliflower Taco Ingredients

  • Cauliflower. Cut the head of cauliflower into evenly sized florets (as best you can) so that each piece is roasty and delicious (and nothing is burned or under-done).

  • Extra-virgin olive oil. Just a bit for roasting!

  • Taco seasoning. You know we’re all about our homemade taco seasoning, but it’s OK to use a store-bought seasoning here, if that’s easier.

  • Lime juice. Fresh, please!

  • Tortillas. You could do homemade tortillas, if you really want to make the best cauliflower tacos on earth. But store bought tortillas are great, too. Corn tortillas or flour tortillas — you pick!

  • Shredded cabbage. Just a little hint of crunch to balance out the toasty, roasty-tender cauliflower pieces.

Tips For Perfect Roasted Cauliflower

We discuss the best method for roasting cauliflower at length in our Roasted Cauliflower post, but just in case you missed it, here’s a refresher: The key to achieving the ideal texture and color with your roasted cauliflower is using high heat. We like the inside of our cauliflower to be soft and the outside to be crispy. Roasting it at too low a temperature will result in a mushy texture, which is not at all what we’re going for here.

How to Make Cauliflower Tacos

  1. Season the cauliflower!

  2. Roast the cauliflower!

  3. Whip up that avocado crema!

  4. Bring it all together and dig in. On taco night, we like to lay out all of the taco ingredients separately and let everyone make their own tacos! That way, everyone can fill them with only what they love. Our perfect cauliflower taco starts with a warm tortilla, then comes lots of roasted cauliflower, a little shredded cabbage, cilantro and then a generous drizzle of avocado crema. YUM!

How to Make Avocado Crema

The cauliflower makes these tacos delicious, but the avocado crema makes them craveable. To create this luscious concoction we use:

  • Avocados

  • Sour cream

  • Lots of garlic

  • Fresh lime juice

  • Fresh cilantro.

All that goodness gets blended until creamy and the result is a sauce you’ll wish you made more of. You can drizzle the crema on top of your roasted cauliflower taco (like we did here), or toss the cabbage in it for an easy slaw.

Roasted Cauliflower Taco Recipe with Avocado Crema

Ingredients

Cauliflower Taco

  • 1 large head cauliflower, cut into small florets
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons taco seasoning
  • 2 tablespoons freshly squeezed lime juice, from 1 lime
  • 10 (6-inch) corn or flour tortillas
  • 2 cups shredded red cabbage
  • ⅓ cup roughly chopped cilantro

Avocado Crema

  • 1 avocado
  • 1 garlic clove, minced
  • ½ cup sour cream
  • ½ teaspoon sea salt
  • ¼ cup freshly squeezed lime juice, from 1 lime
  • ¼ cup cilantro leaves

Method

  1. Preheat the oven to 400°F with a rack in the center position.

  2. In a large bowl, toss the cauliflower with 2 tablespoons of the olive oil, taco seasoning, and lime juice then spread out on a large rimmed baking sheet.

  3. Roast in the oven for 30 minutes or until cauliflower is tender with crispy edges.

  4. Meanwhile, prepare the avocado crema. To a food processor or small blender, add the avocado, garlic, sour cream, salt, lime juice and cilantro, blend until smooth.

  5. Heat ½ teaspoon of the remaining oil in a large cast-iron or nonstick skillet over medium heat. Once the oil glistens, add one tortilla and cook until toasty and warmed, about 30 seconds per side. Repeat with the remaining tortillas, adding additional oil to the skillet for each, as needed. Stack the toasted tortillas and wrap them in a clean kitchen towel to keep them warm.

  6. Divide the roasted cauliflower between the tortillas. Top evenly with shredded cabbage and cilantro. Drizzle with avocado crema and serve.

    Can I use frozen cauliflower florets?

    Texture will be different and is better with fresh cauliflower but you could try it!

I made also made the crema and followed the link for the taco seasoning. I halved the creams ingredients and quartered the taco recipe seasoning recipe to not commit without trying, lol. I will def be making again!
