We’re so excited to share our favorite ground turkey stuffed pepper recipe! When we’ve got a few minutes to cook, making a meal that fills our family’s bellies with ultra-healthy foods like quinoa, black beans and ground turkey and black beans makes us feel like superheroes. Meaty, lean ground turkey is cooked with lots of onions, garlic and spices for a deeply flavorful turkey filling. Plus, we add some Homemade Taco Seasoning (or store-bought in a pinch), and cover the stuffed peppers with some melty cheese (you’ve gotta!) for a protein-packed, easy dinner that our entire families always gobble up. Ingredients For Turkey Stuffed Peppers

  • Bell peppers: Any color you want to use is OK, but we think red bell peppers are the most fun (and kids seem to feel that way, too).

  • Ground turkey

  • Quinoa: A lot of turkey stuffed pepper recipes call for rice, but we prefer to use quinoa because it’s such a nutritional powerhouse! Protein, antioxidants, zinc, fiber, folate — it’s just so good for you, and delicious, too. Our Perfect Quinoa recipe is super easy to make ahead of time, too.

  • Canned tomatoes: We like to use fire roasted diced tomatoes, because the fire-roasting adds a lot of flavor, but any canned tomato you have on hand would be OK.

  • Black beans: Canned is just fine, or if you’re meal prepping and have more time, you could use dried beans.

  • Taco Seasoning: store-bought or make our Homemade Taco Seasoning!

  • Onions, garlic and olive oil: You know we basically never cook without these!

  • Jalapeño. We like to add jalapeños to these stuffed peppers because we love a little heat, but it is completely fine to leave it out.

  • Pepper Jack cheese: If you’re kids don’t love spice, just use regular Jack cheese, or a Mexican blend would be yummy, too.

How to Make Turkey Stuffed Peppers:

  1. Brown the ground turkey in a big skillet. Once it’s cooked, add the onion and garlic.

  2. Stir in cooked quinoa, a can of tomatoes, fresh jalapeñoes, taco seasoning, black beans and cheese.

  3. Cut those bell peppers! Cut them in half, and use a spoon to scrape out the seeds. Line peppers on a lightly-greased baking sheet.

  4. Fill the bell peppers! Sprinkle with even more cheese.

  5. Bake until the peppers are tender and juicy, and the cheese is melted and gooey. Devour!

Do You Have to Blanch Peppers for Stuffed Peppers?

Nope, there’s no need to parboil or soften the peppers before you stuff them. How genius is that? Simply stuff raw bell peppers—you want them to hold their shape in the oven as they bake, so blanching the peppers before stuffing them with the seasoned ground turkey would soften them, which is the opposite of what you want.

What Should I Serve With Stuffed Peppers?

You don’t have to serve them with anything—these taco-spiced ground turkey stuffed bell peppers are so loaded with goodness (beans! Veggies! Quinoa! cheese!) that they absolutely qualify as a stand-alone meal. However, if you want a little extra something green on your plate, a Simple Green Salad is always a nice touch, and doesn’t add too much meal-prep time.

Turkey and Quinoa Stuffed Bell Peppers Recipe

Ingredients

  • 4 large bell peppers, halved and seeded
  • 1 tablespoon extra-virgin olive oil, plus more for greasing
  • 1 pound ground turkey
  • 1 small yellow onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 3 cloves garlic, minced
  • ¾ teaspoon sea salt
  • 1 ½ cups cooked quinoa
  • 1 (14-ounce) can fire roasted diced tomatoes, drained
  • 2 tablespoons Taco Seasoning, homemade or store-bought
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 ¾ cups shredded pepper jack cheese
  • ¼ cup chopped fresh cilantro, for serving (optional)
  • 1 avocado, diced, for serving (optional)
  • ¼ cup crumbled cotija, for serving (optional)
  • 2 green onions, white and green parts chopped, for serving (optional)

Method

  1. Preheat the oven to 350°F with a rack in the center position. Grease a 9x13-inch baking dish or rimmed sheet pan with olive oil.

  2. Place the peppers cut sides up in the prepared baking dish.

  3. Heat the olive oil in a large skillet over medium high heat. Once the oil is glistening, add the turkey, onion, jalapeño, garlic, and salt. Cook, breaking up the meat with a wooden spoon, until the turkey is browned about 6 minutes. Turn off the heat. Stir in the quinoa, tomatoes, taco seasoning, black beans, and 1 cup of the pepper jack.

  4. Spoon the filling into the bell pepper halves. Cover the baking dish with foil and bake for 30 minutes. Remove from the oven, discard the foil, and sprinkle the peppers with the remaining ¾ cup of pepper jack. Return the peppers to the oven and cook, uncovered until the cheese is melted and the peppers are soft and tender 15-20 more minutes.

  5. To serve, top with the cilantro, avocado, cotija, and green onions if using.

    Hello! To be certain I am following correctly, we are to cook enough quinoa to yield 1 cup of COOKED quinoa? Not take 1 cup of uncooked quinoa, and cook it to package directions? From what understand quinoa expands 4x in size, so I only need to cook 1/4 cup to yield 1 cup of cooked quinoa. Is that correct?

    Th inking of doubling the recipe because I have sooooo many garden peppers. Wanted to freeze them…. Or at least one batch. Should I void them all, then freeze? Or just stuff and freeze in the raw pepper? Not sure how it would hold up? Thoughts?

    hmm haven't tried freezing them pre-baked. Probably bake them first.

    Another great recipe from Modern Proper, but why am I surprised?! I made a few changes with the ingredients we had -- I only had one can of black beans, I used crushed tomatoes (because I had just made Modern Proper's restaurant style salsa the day before and had some leftover), and I used grass-fed grass-finished beef -- and they turned out SO GOOD! I doubled the recipe because I received A TON of bell peppers from my mother-in-law's garden, froze half (follow recipe up to step 4 and then freeze, cook from frozen at 400 for 45 mins.), and it's such a treat knowing we have a healthy, yummy meal waiting for us in a pinch. Thanks for another great one, MP!
