Ingredients for a Healthier Take on Sweet Potato Casserole.

  • Sweet potatoes: You’ll need about five big sweet potatoes for this casserole.

  • Coconut oil: Instead of butter, coconut oil lends richness and a healthy boost to our lightened up casserole.

  • Spices: Cinnamon and ground nutmeg.

  • Pumpkin seeds: Crunchy and healthy, what could be more autumnal than pumpkin seeds?

  • Candied ginger: We love candied ginger! You can usually find it in the bulk foods section, wherever you’d find the pecans and pumpkin seeds.

  • Dried cranberries: The hardest part is not snacking on all of them before you add them to the healthy sweet potato casserole.

  • Pecans: Rich and nutty, pecans are such a nice complement to the sweetness of the sweet potatoes.

  • Maple syrup: Instead of refined white sugar, our healthy sweet potato casserole gets its sweetness naturally, from maple syrup. YUM.

How to Make Healthy Sweet Potato Casserole

  1. Slice the sweet potatoes. A mandolin is really helpful for getting the perfect, uniform slices of sweet potato that you see in the pictures, but you can totally use a good sharp knife if that’s what you’ve got.

  2. Melt the coconut oil, and toss it with the spices, salt and sweet potato slices.

  3. Tap into your most type-A self and arrange the sweet potato slices in the baking dish.

  4. Sprinkle the arranged sweet potatoes with all the healthy, crunchy toppings! Pumpkin seeds, ginger, cranberries, and pecans, tucking some of the ingredients between slices.

  5. Drizzle the casserole with maple syrup!

  6. Bake until the sweet potatoes are tender and golden brown.

Make It Ahead

For holiday meals like Thanksgiving, having some side dishes you can easily make ahead of time is KEY. This healthy sweet potato casserole recipe is pretty forgiving. You could prep it the night before, pop it in the fridge overnight and bake it the day of your big dinner. You could even plan to serve it at room temperature and not stress about timing your bake. Healthy Sweet Potato Casserole

Ingredients

  • ½ cup coconut oil, melted, plus more for greasing
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon kosher salt
  • 5 large sweet potatoes, peeled and sliced into ⅛-inch thick rounds (about 2½ pounds)
  • ¼ cup pumpkin seeds
  • ¼ cup chopped candied ginger
  • ¼ cup dried cranberries
  • ½ cup chopped pecans
  • ¼ cup maple syrup

Method

  1. Preheat the oven to 375°F with a rack in the center position. Grease a 9 x 13-inch baking dish with coconut oil.

  2. In a large bowl, combine the ½ cup coconut oil, cinnamon, nutmeg, and salt. Add the sweet potato and toss to coat.

  3. Arrange the sweet potatoes in stacks. Place the stacks on their side, and place them in the prepared baking dish, filling the pan. Sprinkle all over with the pumpkin seeds, candied ginger, cranberries, and pecans, tucking some of the ingredients between the potato slices. Drizzle with the maple syrup.

  4. Bake until the sweet potatoes are tender and golden brown, 50-60 minutes, covering the baking dish with foil if the potatoes are browning too quickly.

Notes

If you have one, use a mandolin to get those even, thin slices!
