Sweet Berries In A New Kind of Summer Dessert

Once berry season hits, we look for as many ways to gobble down as many of those raspberries, blueberries and strawberries as we can possibly find. Let us introduce you to the newest member of our fresh berry dessert family: mixed berry bruschetta with whipped yogurt spread. It’s an insanely simple dessert that celebrates the perfection of ripe berries—in other words, it’s super great.

You’re gonna need more than a few ingredients to make this dish, but it is really really easy to throw together. The first thing you’re gonna want to do is head to your backyard, your local farmers market or u-pick field and get yourself some berries! Next you’ll want to make a quick trip to your local grocery store for the rest:

  • Challah bread
  • Plain Greek yogurt
  • Mascarpone
  • Any mix of berries you love—blueberries, raspberries, strawberries, or cherries.
  • Your favorite honey

Fix It and Forget It Summer Dessert

After the 4 hour strain session the Greek yogurt gets, the rest of this dessert comes together in a flash and with very minimal effort. Here are the steps for making the slightly sweetened mascarpone, yogurt spread and how to for building this berry bruschetta.

  1. Strain the greek yogurt over a cheesecloth lined colander for 4 hours. This will ensure that your bread won’t get soggy!
  2. Slice the challah bread and toast it.
  3. Whip the strained yogurt and mascarpone together until it’s smooth and fluffy and spread it on to your toasted bread slices.
  4. Top with berries and drizzle with honey! Enjoy.

Mixed Berry Bruschetta With Whipped Yogurt Spread

Ingredients

  • 1 large loaf challah bread
  • 2 cups plain greek yogurt
  • 8 oz mascarpone
  • 1 cup blueberries
  • 1 cup raspberries
  • 1/2 cup strawberries, sliced
  • 1/2 cup cherries, pitted and halved
  • 1/2 cup honey

Method

  1. Place a double layer of cheesecloth over a colander and set it over a plate or bowl. Scoop yogurt into the cheesecloth and let it strain for 4 hours.
  2. Slice challah bread into 12 -1 ½ in slices. Place bread slices on a baking sheet and toast each side under a broiler, or use a grill to get it all nice and toasty. Using a standard broiler you will only need 1-2 minutes on each side.
  3. Using a kitchen stand or hand mixer, whip strained yogurt and mascarpone together until smooth and fluffy.
  4. In a separate bowl gently stir blueberries, raspberries, strawberries and cherries until their own juices begin to lightly coat themselves.
  5. Divide the yogurt mixture evenly onto the 12 slices of bread. Carefully scoop some berries out and place them on top of the yogurt.
  6. Drizzle with 2 teaspoons each with honey and serve.

    Can I make this in advance or has to be eaten right away ?

    We wouldn't assemble these until you are ready to eat. The bread will get soggy if it sits for too long ahead of time. Hope you enjoy Cilicia.
