    A Bright And Easy Salad For The Holidays

    I love an arugula salad in winter. This winter salad is fresh and full of flavors that awaken the senses–lively citrus and pomegranate with crispy greens in a zesty dressing are just what we’re craving this time of year. It all comes together with this easy salad that’s perfect for entertaining during the holidays.     Ingredients For The Best Christmas Salad

    • For the dressing: olive oil, vinegar, clementine zest, clementine juice, honey, Dijon, shallots, salt, and pepper

    • For the salad: spinach, arugula, feta, clementines, pomegranates, almonds, and chives

    How To Make This Winter Christmas Salad

    1. Make the dressing. In a small bowl, whisk together the olive oil, vinegar, clementine zest, clementine juice, honey, Dijon, shallots, salt, and pepper until emulsified.

    2. Assemble the salad: In a large bowl, combine the spinach, arugula, feta, clementines, pomegranates, almonds, and chives (if using). Drizzle with the dressing and toss to coat.

    How to Store Leftovers + Tips

    • Any citrus will work in this salad–oranges, Satsuma, or Mandarin oranges are all great. If you’re working with citrus that has a tougher pith than clementines, we recommend supreming the fruit–that is, cutting the flesh of the citrus from the skin using a sharp paring knife.

    • Don’t have white wine vinegar? Swap in raw apple cider vinegar, champagne vinegar, or rice vinegar.

    • Leftovers are best eaten within 1-2 days, before the greens start to wilt too much. We don’t recommend freezing this salad.

      Ingredients

      • ½ cup extra-virgin olive oil
      • 1 tablespoon white wine vinegar (see Note)
      • 1 teaspoon grated clementine zest
      • ⅓ cup fresh clementine juice (from about 6 clementines)
      • 2 teaspoons honey
      • 1 teaspoon Dijon mustard
      • 2 tablespoons minced shallots
      • ¾ teaspoon sea salt
      • ¼ teaspoon freshly cracked black pepper
      • 5 ounces baby spinach (about 4 cups)
      • 5 ounces baby arugula (about 3 cups)
      • 4 ounces crumbled feta or goat cheese
      • 6 clementines, segmented
      • ½ cup pomegranate seeds or craisins
      • ⅓ cup sliced almonds
      • ¼ cup minced chives (optional)

      Method

      1. In a small bowl, whisk together the olive oil, vinegar, clementine zest, clementine juice, honey, Dijon, shallots, salt, and pepper until emulsified.

      2. In a large bowl, combine the spinach, arugula, feta, clementines, pomegranates, almonds, and chives (if using). Drizzle with the dressing and toss to coat.
