These fajita burrito bowls are ideal for meal prepping!! Taking cues from Chipotle’s burrito bowl, we like to pile everything up high making for one delicious prep ahead meal!

Bowls are all the rage right? Rice bowls, quinoa bowls, Buddha bowls, burrito Bowls. Give us all the bowls! This chicken fajita bowl is one of our go-to weeknight meals. It’s healthy, easy, and balanced. Plus, it’s always a hit with the kids. A fajita burrito bowl might sound complicated, but they’re super simple. Season some chicken with Homemade Taco Seasoning—add some black beans, roasted bell peppers and all the fixings and serve over Brown Rice or Cilantro Lime Rice. Plus, it’s an ideal meal for all of you superhero meal-planners! Prep the ingredients a few days ahead, and you’ve got a customizable, buildable meal ready to go. What Goes into a Burrito Bowl?

Honestly, in many ways a burrito bowl recipe is kind of like a suggestions list—you can load yours up with as much or as little as you want! But we always load our chicken fajita burrito bowl with:

Prep-Ahead Fajita Bowls

Taking cues from Chipotle’s burrito bowl, we like to pile everything up high, and (also just like Chipotle) we prefer to prep the ingredients ahead of time, so that when dinner time comes, everyone can just assemble and EAT! The taco-spiced chicken breast can be easily made ahead and is an incredibly easy recipe. After that, you just need to prep all your other ingredients and store them in small containers, so they’re ready as can be!

Are Burrito Bowls Healthy?

You betcha! We build this burrito bowl on a brown rice base, so it has a healthy start. But, if you’re trying to eat fewer carbs, a big pile of shredded romaine makes for a delicious base in place of the rice. Adding a little extra salsa and lime juice to your bowl will give it a sort of “dressing”. Once you’ve chosen your base add the proteins (chicken and beans), veggies, and healthy fats (I see you guacamole!) and you’ve got yourself a delicious, balanced dinner.

Chicken Fajita Burrito Bowl

Ingredients

  • ¼ cup Taco Seasoning, homemade or store bought
  • 2 tablespoons fresh lime juice, (from 1 to 2 limes)
  • 1 tablespoon extra-virgin olive oil
  • 2 pounds boneless, skinless chicken breast, cut against the grain into ½-inch-thick
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small red onion, halved and thinly sliced

For serving

Method

  1. Preheat the oven to 375°F with a rack in the center position.

  2. In a large bowl, stir together the taco seasoning, lime juice, and olive oil. Add the chicken, bell peppers, and onion and toss to coat. Spread the mixture onto a rimmed sheet pan.

  3. Bake for 15 to 20 minutes, or until the chicken is cooked through. If desired, turn the oven to broil and cook for 3 more minutes, or until the chicken is lightly charred.

  4. To serve, divide the rice between 6 bowls. Top with chicken, bell peppers, onion, beans, guacamole, sour cream, pico de gallo, cilantro, and lime wedges alongside.

    Can you substitute the chicken for shrimp and use the same marinade and cooking method?

    You can use the same marinade but probably only bake on 350F for 9-13 minutes until opaque. Hope you enjoy!

    Hi, can this be left to marinate longer? like overnight?

    Sure! just don't marinate chicken more than 24 hours.

    I am allergic to cilantro and parsley, what can I substitute.

    Cilantro is just an optional topping. Feel free to leave it out hope you enjoy!

    Can I use lemon juice instead of lime juice??

    WEe recommend lime, it will change the flavor quite a bit.

    Wow!! The Chicken Fajita Burrito Bowl was the best. I loved the taco seasoning spice. My husband loved it as well. I doubled the marinade, I wasn’t sure if it would be enough for everything. It turned out perfect, I also added more time for the chicken. I think we had more chicken than needed. This recipe is a keeper, I needed a recipe like this.

    Great seasoning! I brined my chicken breast first for a couple of hours, then marinated it for an hour, then cooked the chicken stove top in a cast iron pan. I didn't have the dried garlic, so I used fresh in the marinade. It was juicy and very tasty. I'll be making this a lot!
