When I think of comfort food, my mind goes straight to melted cheese every time. And what better vehicle for melted cheese is there than the humble baked quesadilla? I have a long history with homemade baked chicken quesadillas. My mom made them for me and my sisters a lot when we were little, but my love for tortillas and cheese grew exponentially as a teenager. I remember coming home from swim practice and ravenously eating two or three of them in seconds, leaving a trail of grated cheese and a greasy skillet in my wake.

What Is A Quesadilla?

A baked quesadilla is just tortilla filled with cheese and chicken! Over the years the ingredients have varied, but my passion for quesadillas has remained constant. From the Pioneer Woman’s mushroom-and-spinach version that was on weekly rotation in our home as newlyweds, to the ham-and-cheese between two corn tortillas variety that was my constant pregnancy craving, and now a baked version—I’m confident that this cheese and chicken quesadilla and I are in it for the long haul.

How Do You Make a Good Chicken Quesadilla?

The key to an amazing chicken quesadilla recipe is the seasoning and the addition of any white Mexican cheese like Monterey Jack or Mozzarella. We think this is the best cheese for quesadillas because...hello cheese pull (and mild flavor). Here, I also use one of my favorite pantry staples to give this homemade quesadilla an addictive smoky, spicy flavor: canned chipotle peppers. Finely chop them, then add them to a bowl with shredded chicken, shredded cheese, and sour cream. Mix it all together and the result is the best quesadilla filling ever.

How to Bake Quesadillas In The Oven:

What I LOVE about this easy quesadilla recipe, is that there is no frying involved. When making baked chicken quesadillas in the oven you can avoid standing over the stove and go straight to cooking 10 cheesy, mouth watering, perfectly toasted homemade quesadillas at once that go from oven to instant party platter in no time.

Step One: Mix cooked, shredded chicken with cheese, sour cream, chipotle peppers and seasoning in a bowl.
Step Two: Open a tortilla.
Step Three: Fill half of the tortilla with ⅓ cup of that delicious filling.
Step Four: Fold quesadilla in half.
Step Five: Arrange 4-5 prepared quesadillas on a large baking sheet.
Step Six: Brush tortillas with olive oil.
Step Seven: Bake at 425°F for 15 minutes.

Baked Chicken Quesadillas

  • Serves: 8


  • 8-10 10" flour tortillas
  • 4 cups Shredded chicken (about 1.5 lbs)
  • 1 tbsp (1 or 2) chipotle peppers in adobo sauce, depending on how hot you like it
  • 2 cups (16 oz) sour cream, divided
  • 2 cups (8oz) shredded pepper jack cheese or mozzarella


  1. Preheat oven to 425°F.
  2. In a large bowl stir together the shredded chicken, 1 1/2 cups sour cream, chipotle pepper, shredded cheese and salt to taste.
  3. Line 2 large baking sheets with parchment paper. Grease the parchment with cooking spray or apply olive oil with a brush.
  4. Working with one tortilla at a time, add 1/3 - 1/2 cup filling on one side of the tortilla and fold in half.
  5. Arrange prepared quesadillas on a baking sheet and brush or spray with oil.
  6. Bake on center rack for 15 minutes until golden brown and crispy.
  7. Serve with remaining sour cream, guacamole, salsa or fresh pico de gallo.
