My life right now looks a little like this: my husband is constantly working late trying to finish big projects, and I am constantly losing track of time at the pool with the kids trying to burn off their never ending supply of energy and soak up all the sun I can.

That being said, quick dinners are becoming my best friend. The last thing I want to do at the end of the day is spend a long time in the kitchen while famished kids beg for food.   If you can at all relate, then you’ll be happy to hear that the recipe I’m sharing today for this smoky grilled salmon with avocado salad comes together in under 30 minutes, start to finish.

Salmon is one of those proteins that can handle a lot of flavor and a lot of varieties of flavor. You can go as simple as roasting it with salt and pepper or as exotic as a simmer in green curry sauce. You can even glaze the fish with your favorite sauce and lay it directly on the grill if fussy cooking isn’t your thing.

How To Grill Salmon

For this recipe, we’ve topped salmon with our favorite taco spice blend (which includes a secret smokey ingredient) and then wrapped it in foil and tossed it on the grill. Wrapping it in foil allows for all that flavor to steam into the salmon, giving it an extra punch of flavor! Who doesn’t want that? It also prevents any sticky situations.

Salmon is Healthy

Salmon is high in Omega-3 fatty acids. If you aren’t familiar with these fats, they’re the good ones. Your body doesn't produce these fats on its own, so you need them in your diet. Salmon is also high in protein, vitamins, and promotes brain health. Admittedly, we’re no health food bloggers, but we’ve done our research and this fish is a good one.

It’s All About The Toppings

To really take this delicious salmon to the next level, we’ve topped it with an avocado and tomato salad. Grilled corn, plenty of lime juice, and fresh herbs put this simple salad over the top! I’m telling you friends, whether you want to impress your guests or just serve a quick and healthy dinner to your family at the end of a long day with *very*  little effort, this salmon dinner is sure to get the job done.

Smoky Grilled Salmon with Avocado Salad

Serves 4

Ingredients

1 1/2-2 lbs salmon filet
1 tbsp olive oil
2 limes
2 tbsp taco seasoning

Avocado Salad

2 slightly firm avocados, diced
1 jalapeño, seeded and diced
2 limes, juiced
1 tbsp olive oil
1/4 cup cilantro packed
2 ears of cooked or grilled corn, corn removed
2 garlic cloves, minced
1 pint cherry tomatoes, halved
1/2 tsp salt
freshly ground pepper

Method

  1. Preheat grill to medium heat.
  2. On a large piece of foil, set salmon filet in the center. Drizzle with olive oil and sprinkle with taco seasoning. Squeeze limes over the seasoned salmon and bring edges of foil together to wrap the salmon.
  3. In a large bowl combine all ingredients for avocado salad, stir well and set aside.
  4. Set foiled salmon directly on grill. Close lid and cook for 12 minutes.
  5. Remove from grill and check for doneness. Salmon should be opaque and flaky, not dry.
  6. Top salmon with avocado salad and serve.
