Natalie and I are both in the younger stages of our families and are still heading to our parent’s house for big Thanksgiving dinners with extended family. We know the time will come when we make the transition to hosting holiday meals of our own, but for now we are content to work at perfecting the dishes we contribute to the feast. This year we are both focusing on sides at our respective gatherings, and have excitedly spent a lot of time scheming up what we’ll contribute. Turkey and pies land squarely in the domain of our mothers and we have no intentions of disrupting that. It's their thing and they do it well. It's a beautiful season of us learning the ropes from their sage and graceful years of hosting, while slowly building our resume of signature dishes.

Amidst our planning, we discussed how it would be fun to tackle a dish that is often an afterthought on the Thanksgiving table: the salad. Let's face it, salads can get lost in the shuffle amidst an overwhelming sea of rich savories and decadent sweets, but we are firm believers that a little balance and contrast go a long way in the success of a meal. All that being said, if a salad is going to succeed on the holiday table, it needs to be interesting and seasonally appropriate.

We think we have found a winner in this brussels sprout salad. This is the perfect dish to make for those of you told to “just bring whatever” (when assignments for mainstays like mashed potatoes and stuffing have already been handed out), but also pairs well with any dinner this time of year (it would be an amazing addition to turkey leftovers post Thanksgiving). It’s bright and crisp, chock full of ingredients that represent the best of autumn and bursting with flavor. I’ve made it twice in the last few weeks and intend on making it on the big day, as well.

Whether you're like us and only have sides to focus on this year, or are responsible for the bird, as well as all the rest, be brave and give this salad a try. Your palate will thank you for the refreshing refuge amidst all that gloriously salty food, and you might just find yourself being asked to “bring that amazing salad again” next year. It's that good.

Shaved Brussels Sprout Salad with Creamy Maple Dressing

Serves 6

Creamy Maple Dressing

1/4 cup mayonnaise
1/4 cup olive oil
1/4 cup maple syrup
1 tbsp stone ground mustard
1 tbsp apple cider vinegar
1 tsp sea salt
freshly ground pepper to taste

Salad

20-25 large brussels sprouts
1/2 cup pepitas (pumpkin seeds)
1 1/2 cups pecan halves, toasted (this helps keep them crunchy)
1 large honeycrisp apple, sliced
1 1/2 cups dried cherries
1 pomegranate, seeded

Method

  1. In a small bowl, whisk all the ingredients for the dressing until incorporated.
  2. Using a mandoline, shave brussels sprouts and place them in the bowl. Toss with the maple dressing and fold in the pumpkin seeds, pecans, apple slices, cherries and pomegranate seeds.
