A Creamy Maple Dressing, spiked with apple cider vinegar and mustard, coats shaved Brussels sprouts, pumpkin seeds and crisp apples in this perfect autumn salad recipe. We had Thanksgiving side dishes in mind when we dreamt it up—a crisp, healthy counterpoint, (similar to our Endive and Roquefort Salad with Pear Vinaigrette or Radicchio salad with Crème Fraîche Vinaigrette), to the traditional, heavy Turkey Day fare—but these days we find ourselves lusting after it all season long. Delicate, shredded Brussels sprouts give this fall salad a restaurant-quality elegance that makes it right at home on even the most festive table, but it’s easy enough to serve on a weeknight to perk up a dinner of simple Roasted Chicken.

How To Shave Brussels Sprouts (Hint: You Have Options!)

Some people see the word “shaved” in a salad recipe, assume you need a mandoline, and run for the hills. While using a mandoline is one way to shave Brussels sprouts, fear not! It’s not the only way. Here are three ways to shave Brussels sprouts:

  1. Food processor! Yep, you know that weird food processor attachment that’s hiding in the back of your cupboard and looks like a great way to cut yourself? Similar in shape to the grating disc, it’s called a “slicing disc” and it’s perfect for work like shredding Brussels sprouts. P.S. it is indeed very sharp, so work carefully.
  2. Mandoline. A mandoline slicer just can’t be beat for thin-slicing, and shaved Brussels sprouts are no exception.
  3. A sharp knife. Just slice them as thinly as you possibly can. This is far and away our least favorite method, because it’s difficult to get the Brussels sprouts thin enough to be delicious eaten raw, but it is a workable back-up option if you don’t have a mandoline or food processor.

Shaved Brussels Sprout Salad with Creamy Maple Dressing

Ingredients

  • 1½ pounds large Brussels sprouts, very thinly sliced (see Note)
  • ½ cup pepitas
  • 1½ cups pecan halves, toasted
  • 1 large honeycrisp apple, cored, sliced
  • 1½ cups dried cherries
  • 1 cup pomegranate, seeds (from 1 pomegranate)
  • ¾ cup creamy maple dressing recipe

Method

  1. In a large bowl, toss the shaved Brussels sprouts with the pepitas, pecans, apple slices, cherries, pomegranate seeds, and dressing until coated.

  2. Serve family style.


Note: The best way to get super thin shredded Brussels sprouts is to use a mandoline. If you don’t have one, just use a sharp knife and try to slice as thin as possible (watch your fingers!).

    Can you used the pre-shredded sprouts that you can buy in the store? Or do you recommend shaving them yourself?

    You can certainly use pre-shredded Brussels sprouts!

    This was so simple and so good - I skipped the dried cherries as I didn't have any, and added some cooked bacon. I tossed the shaved brussels sprouts with the dressing 3 hours before dinner and added in the rest right before serving. The dressing is so tasty, will definitely make again!

    This salad is fabulous in any and all forms. I’ve only used the creamy maple dressing…. I have made it using kale, cabbage, red and green leaf lettuce etc…. I have used various nuts and seeds depending on what’s fresh at my store. It is foolproof. The one thing I will say is that when using a hardy veg/ lettuce….is I dress it a few hrs before I add the apples, seeds etc…. This recipe will not let you down! So very forgiving…..enjoy
