Ah, Valentine’s Day. A day for lovers, friends, and family to celebrate the highest of all virtues. Perhaps even more importantly, a day for me to eat chocolate. Let's just call a spade a spade shall we? Natalie and I had a good many conversations discussing which sweet we wanted to share with our readers for Valentine’s Day, because we all know that day above all days the sweet really matters. We excitedly landed on a dessert that is meant to be shared, and really does bring people together. Introducing the skillet cookie (aka the pazookie). Just in case you don't know about these amazing things, they're a delightful take on a gigantic cookie, that just happens to be served slightly gooey and hot out of the oven from a skillet, preferably adorned with a few rather large scoops of ice cream that get all melty and soupy in the best way possible. And while you could scoop out portions of this giant cookie into individual bowls, that really takes the fun out of it. I find it is best enjoyed straight out of the skillet, making it the perfect Valentine’s Day treat to share with a loved one, your kids, or friends you don’t mind getting cooties from.

We decided to make it a traditional chocolate chip based dough, because really, chocolate chip cookies will always trump every other variety, and because we have yet to show you our favorite chocolate chip cookies here on the blog. Maybe soon. Until then may I remind you that in addition to this salty dark and milk chocolate skillet cookie we have a delightful cookie brittle that is always begging to be made.

The last and final reason we decided on this beauty is even when I'm out for Valentine’s Day (or any nice meal for that matter) I rarely feel like ordering dessert, because I’m always so full from a wonderful dinner. Can you relate? So this year, here's my perfect plan- in advance I’ll head to my local Fred Meyer store and pick up all the ingredients I need to make this dish (I’ll be sure not to forget the ice cream!), make the dough ahead of time and place it in the fridge for safe keeping, enjoy a lovely dinner at one of my favorite restaurants with my best guy, come home, put the kids to bed, pop this pazookie in the oven, cuddle up with my love and share this sinfully delicious dessert while watching a flick. See? Perfect. (Also acceptable, staying in, ordering take-out, and diving into this dessert solo. Treat yo self! You deserve it!)

Salty Dark and Milk Chocolate Skillet Cookie

Serves 2

Ingredients

8 tbsp butter, melted
1/2 cup brown sugar, packed
1/4 cup raw sugar
1 egg
1 tsp vanilla
1 1/4 cup flour
1/2 tsp baking soda
1/2 tsp sea salt
2 oz milk chocolate, finely chopped
1/2 cup dark chocolate chunks
vanilla ice cream
Maldon salt
extra chocolate shavings

Method

Heat oven to 350°F. In a mixing bowl combine the melted butter and both sugars. Stir until fully incorporated. Mix in egg and vanilla. Add the flour, baking soda and sea salt to the bowl. Stir until a dough forms and no dry bits remain. Stir in both chocolates. Press dough into a lightly greased 8” or 10” cast iron skillet. Bake until center is firm, but still a bit gooey 18-20 minutes. Remove from oven and cool slightly. Top with ice cream and flakey sea salt and enjoy!
