Wake up, make breakfast, do dishes, dress the kids, oh...coffee, change a couple diapers, remember I had to use the bathroom 2 hours ago, break up a fight, find a missing Barbie shoe, and then suddenly it's noon and the kids are hungry...again. Sandwich, fruit, some veggies and hummus, check, check, and check. Okay happy kids. Laundry, naps, wipe down the counters, and then somewhere in the midst realize I'm starving and have been running on coffee alone. Sound familiar? If you're a parent I'm sure you can relate, and if you're not I'm sure that whatever your day looks like, more often than not you find yourself doing everything else besides taking care of yourself. It's an easy (and terrible) habit to fall into, but we’ve all been guilty of it.

Some time ago while over at a friend's house for a play date with our kids, I watched her nonchalantly saute a big handful of kale, fry up a chicken sausage, top it with half an avocado and some hot sauce and call it good. She handed me a bowl and I quickly devoured it not realizing how hungry I had been. I was surprised by how luxurious it felt to have an adult meal (real food intended just for me) for lunch. The sandwich scraps and the half of apple the kids didn't finish, or a burger and fries on the way home from errands that made up my usual lunches just wasn't doing me any favors. I realized how rare it was for me to have a proper lunch in the midst of a busy day. But, here I was enjoying just that and was left not only satisfied, but refreshed and with a fresh dose of energy to get through my day that wasn't caffeine related. What a treat!

Since that day I've made a conscious effort to give myself “lunch breaks” more often. For me this often means some prep the night before to make a healthy lunch possible in the midst of even the most hectic afternoon. One of my favorite go to’s lately is this curried chicken salad. It's good as a sandwich or atop a salad with added veggies. It's hearty, but not heavy, crunchy, and packed with loads of flavor. I make a big batch in the evenings to last a few days, and then after my kids have eaten their lunch I usher them into the play room and sit down for a *quiet* meal all alone. Ah, bliss. And wouldn't you know it? Those few minutes of self care go a long way towards helping me finish the day strong.

 Wherever you find yourself come lunch o’ clock, I encourage you to eat a meal that will leave you better off, not worse, slow down and recharge. You're worth it.  

Curried Chicken Salad Salad

Serves 4

Ingredients

3 cups shredded chicken breast
3 celery stalks finely chopped
1 bunch scallions, thinly sliced
1/2 cup golden raisins
1 cup plain greek yogurt
juice from 1 lemon
1 tbsp honey
1/2 tsp cayenne pepper
2 tbsp curry powder
1 tsp salt
2 tsp freshly ground pepper
mixed greens
thinly sliced english cucumber
halved cherry or grape tomatoes

Salad Dressing

1/2 cup olive oil
6 tbsp rice wine vinegar
1 tbsp honey
1/2 tsp salt
freshly ground pepper

Method

  1. In a large bowl combine all ingredients except mixed greens, cucumber and tomatoes. Mix until fully combined. If you find it to be too dry, add more yogurt 1 tbs at a time.
  2. In a small bowl whisk together ingredients for dressing.
  3. To assemble, scoop one cup of the chicken salad onto a bed of lettuce. Add tomatoes and cucumbers and then dress. Serve immediately.
