Bowls are all the rage right now in my house. In fact my son’s dinner prayer, upon seeing his bulgogi beef bowl the other night, went something like this, “God, bless this food because it looks so good (with one eye open he looks at me)...I’m serious mom, this looks delicious...amen.” If we have a dinner win in our house we run hard with it and it’s for this reason that I love bowls so much right now. White rice bowls. Brown rice bowls. Quinoa bowls. Burrito Bowls. Give me all the bowls!

I like to mix up the themes of our bowls so we don’t get tired of them, so while last week was Korean, today is Mexican!

Taking cues from Chipotle’s burrito bowl, we like to pile everything up high, and (also just like Chipotle) we prefer to prep ahead! These fajita burrito bowls are ideal for meal prepping! The sheet pan chicken (made with chicken breasts and our delicious taco seasoning mix) can be made ahead and is an incredibly easy recipe. After that, you just need to prep all your other ingredients and store them in small containers. When you’re ready to build your bowl for lunch or an easy weeknight dinner just take it all out and assemble!

Are burrito bowls healthy?

You betcha! I opted for brown rice in this bowl, because any time I can offer a healthier alternative to my kids without them complaining I go for it. If you’re trying to go completely carb free a big pile of shredded romaine is delicious, just use extra salsa and lime juice to dress it up. Once you’ve got your base add the proteins, veggies, and healthy fats and you’ve got yourself the ultimate meal loaded with nutrition!

Chicken Fajita Burrito Bowl

Serves 6

Sheet Pan Fajita Chicken Recipe

2 boneless skinless chicken breast
1/4 cup taco seasonong
1 tbsp olive oil
1 lime juiced
1 red onion
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced

Chicken Fajita Burrito Bowl Recipe

2 cups brown rice, cooked
1 13.5 oz can black beans
1 batch guacamole
sour cream
cilanto
pico de gallo

Method

  1. In a large bowl make a marinade using the taco seasoning, olive oil and lime juice. Toss chicken and vegetables in marinade and allow to marinate, covered for 1 hour.
  2. Preheat oven to 375°F.
  3. Spread ingredients across pan and allow to bake for 15 minutes, or until meat is cooked through. If you want to add some char to meat and veggies, broil for another 3 minutes.
  4. In a bowl spread out rice and top with all desired fixings. Enjoy!
  5. *Prep tip- Store all ingredients separately and build for meal prep. If making for lunch store the guacamole, sour cream, salsa and cilantro in a separate container than the rice, chicken and beans. Heat up the bowl and top with fixings!
