And if you just read the above and rolled your eyes, then bear with me because you’ll want to hear this, too. Today I’m talking about fudge which is something most everyone can get excited about.

Chai Tea Fudge

I grew up in a home where fudge was often gifted to us, but never made. Because my mom is a feeler, she preferred the expressive baking of pies to the exacting science of fudge. This year, as I began searching for recipes to establish new traditions in my own kitchen, I’m realizing I’m a feeler, too. I like easy, hard to mess up, impressively delicious recipes that don’t destroy my kitchen. I say ‘no thank you’ to candy thermometers and constant stirring, and I have a feeling I’m not the only one. If you share my fear of labor-intensive treats, then this chai tea fudge recipe is my early Christmas gift to you.

We created this foolproof recipe in partnership with Eagle Brand Sweetened Condensed Milk as part of their “un-cookie” exchange. An “Un-Cookie” exchange is for people who really want to win their friends and family over with the gift of delicious baked goods that are not your typical cookie. It’s being festive, without being predictable. It’s also delicious. Last month, as part of the “un-cookie” exchange we made Coconut Caramel Pecan Bars, but this month we’re making things even more simple. This recipe is as easy as putting all the ingredients in one pot, warming them up and then pouring it into a pan to cool. The most difficult part of this recipe is using self control to not eat the whole pan before your friends can get to them. (Just do yourself a favor and make a double batch.)

The key to skipping out on the thermometer for this decadent fudge is the use of the ever-so-versatile Eagle Brand Sweetened Condensed Milk mixed together with white chocolate chips. The two melt together and firm back up into the silkiest bars loaded with flavor from the warm spices of chai tea. It's the perfect treat for gifting to loved ones or snacking on by the fire alongside a warm cup of our beloved chai tea. So go ahead, make some fudge and be merry.

Chai Tea Fudge

Serves 12

Ingredients

1 14 oz can Eagle Brand Sweetened Condensed Milk
2 11 oz bags white chocolate chips
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp salt
1/2 tsp cardamom
1/2 tsp ginger
1/2 tsp cloves
leaves from 1 black tea bag

Method

  1. Line a 8x8 or 9x9 baking pan with parchment paper. In a small sauce pan, heat the chocolate chips and sweetened condensed milk over medium heat. Stir the mixture until the chocolate chips begin to melt and you achieve a smooth consistency.
  2. Add all remaining ingredients and continue mixing until fully combined. Pour fudge into prepared pan. Place in the refrigerator until fudge is set (about 1 hour).
  3. Store in an airtight container for up to a week.
