This easy Butternut Squash Soup can go from grocery bag to dinner table in less than an hour! With minimal hands on time required, it makes the ideal meal for a busy family. It’s just what you need for a quick, cozy dinner night at home, and as an added bonus it will make your house smell like the magic of fall!

What spices do you add to butternut squash soup?

In my opinion, there are only two types of butternut squash soup worth having:

  • The type with Fall Spices (like this one here)
  • Butternut Squash Soup with Curry

While curried butternut squash soup is legit delicious, for this post we are focusing on ALL THINGS FALL! We are sticking with classic spices like nutmeg and thyme, because they really compliment the roasted sweetness of the apples and squash. Some people like to add sage and cinnamon, but we wanted to keep the flavors clean and light. In our experience both sage and cinnamon can be overpowering in a soup like this.

How do you make butternut squash soup from scratch?

Making soup from scratch can be very easy, especially when using the method we did for this recipe. Our butternut squash soup starts with whole ingredients (apples, squash, onion, garlic) that are roasted in the oven. Once everything is beautifully browned, we transfer it all into the Vitamix blender. 

It sounds too easy, we know, but there is no catch. This is truly the best butternut squash soup recipe out there, and the fact that it’s also the easiest is just the cherry on top! Once you make it, we just know you’ll be hooked on this warm and flavorful fall dinner!

What are the ingredients for butternut squash soup?

For this recipe we use:

  • Butternut Squash
  • Onion
  • Apples
  • Garlic Cloves
  • Thyme
  • Nutmeg
  • Cayenne 
  • Olive Oil
  • Salt, pepper 
  • Cream 
  • Pepitas

We opted for a touch of heavy cream in this recipe, which makes it not qualify as a vegan butternut squash soup, but that certainly does not mean it isn’t a healthy butternut squash soup! We like to think that even with a little added cream, because the base of the soup is mostly fruit and veggies, that it is still a healthy dinner option. (Coconut cream can also be subbed to keep it dairy-free.)  

How do you make roasted butternut squash soup?

We take all the squash, apples, onion and garlic and place them on a rimmed baking sheet. Toss it all in a healthy amount of olive oil, then pop it in the oven! 

We roast all these perfectly fall ingredients together with thyme, then transfer it to the blender where we blend it with the added spices of nutmeg and cayenne.

Tips for making this Butternut Squash Soup: 

  • If you don’t have time to peel a butternut squash, buy it already cubed at the grocery store.
  • You can also buy pre-chopped onion and already peeled garlic for a super speedy dinner.
  • Use a sweet red apple like fuji, gala, or honeycrisp. This will add a lovely sweet note to your soup.
  • Top this soup with pepitas (pumpkin seeds) for an extra special crunch.

Butternut Squash Soup

Serves 4

Ingredients

1 (2.5-3 lb) butternut squash, peeled, 1 ½ inch cubed
1 small yellow onion, quartered
2 sweet apples, (fuji, gala, honeycrisp), cored & sliced
8 garlic cloves
3 sprigs thyme
¼ cup olive olive oil
1 ½ tsp salt
½ tsp freshly ground pepper
¼ tsp nutmeg
¼ tsp cayenne pepper
½ cup heavy cream
Pepitas (optional)

Method

  1. Heat oven to 400°F.
  2. Place the squash, onions, apples, garlic and sprigs of thyme on a rimmed baking sheet. Drizzle veggies with olive oil and season with salt and pepper.
  3. Roast 30-40 minutes until squash is fork tender.
  4. Transfer all the roasted veggies (discard the stem from the thyme) along with the cream to your vitamix blender. Add salt, pepper, nutmeg, cayenne pepper and secure lid.
  5. Select Variable 1. Turn machine on and slowly increase to the highest speed.Blend for 5-6 minutes or until heavy steam escapes from the vented lid. Serve immediately.
