I’ve found myself in that phase of life where, more often than not, I’m cooking for a crowd, not just for my family. I love doing it, but am always in search of something I can put together fast that everyone will love. Enter these chipotle baked chicken quesadillas—the easiest and most delicious meal made en masse you’ve ever tasted.

When I think of comfort food, my mind goes to straight to melted cheese every time. And, aside from my beloved mac and cheese, what better vehicle for melted cheese is there than the humble quesadilla? I have a long history with homemade quesadillas. My mom made them for my sisters and I as a lot when we were little, but my love for those cheese-filled toasted triangles of perfection grew exponentially as a teenager. I remember coming home from swim practice and ravenously eating two or three of them in seconds, leaving a trail of grated cheese and a greasy skillet in my wake.

Over the years the ingredients varied, but my passion for quesadillas has remained constant. From the Pioneer Woman’s mushroom-and-spinach version that was on weekly rotation in our home as newlyweds, to the ham-and-cheese between two corn tortillas variety that was my constant pregnancy craving, and now this baked chicken-chipotle-cheese version—I’m confident that quesadillas and I are in it for the long haul.

How to Make Chipotle Baked Chicken Quesadillas:

What I LOVE about this recipe is that there is no frying involved. With these easy chipotle baked chicken quesadillas you can avoid standing over the stove and go straight to cooking 10 cheesy, mouth watering, perfectly toasted homemade chicken quesadillas at once that go from oven to instant party platter in no time.

Step One: Mix cooked, shredded chicken with cheese, sour cream, chipotle peppers and seasoning in a bowl.
Step Two: Open a tortilla
Step Three: Fill half of the tortilla with ⅓ cup of that delicious filling
Step Four: Fold quesadilla in half
Step Five: Arrange 4-5 prepared quesadillas on a large baking sheet
Step Six: Brush tortillas with olive oil
Step Seven: Bake at 425°F for 15 minutes
Step Eight: Enjoy

But, How Do You Make a Good Chicken Quesadilla?

The key to an amazing chicken quesadilla recipe is the seasoning. Here, I use one of my favorite pantry staples to give the quesadilla an addictive smoky, spicy flavor: canned chipotle peppers. Finely chop them, then add them to a bowl with shredded chicken, shredded cheese, and sour cream. Mix it all together and the result is the best quesadilla filling ever.

What Do You Put on a Chicken Quesadilla?

It’s shredded chicken and gooey cheese, melted inside of a tortilla, so you’re already off to a pretty fantastic start. Toppings on a quesadilla are like icing on a cake—not completely necessary, but so, so good. Here are a few of our favorites:

Sour cream
Your favorite hot sauce
Salsa Verde
Pico de Gallo
Restaurant style salsa

I can easily see this recipe being cooked for a sporting event (like Superbowl), but it’s equally great for award season (my personal fave) or binge-watching your favorite show. As if you needed anymore excuses to eat melty cheese sandwiched between crisp carbs.

Baked Chicken Quesadillas

Serves 10


8-10 10" flour tortillas
4 cups shredded chicken (about 1.5 lbs)
1 tbsp (1 or 2) chipotle peppers in adobo sauce, depending on how hot you like it
2 cups (16 oz) sour cream, divided
2 cups (8oz) shredded pepper jack cheese


  1. In a large bowl stir together shredded chicken with 1 1/2 cups of the sour cream, chipotle pepper, shredded cheese and salt to taste.
  2. Preheat oven to 425°F.
  3. Line 2 large baking sheets with parchment paper and oil using cooking spray or olive oil with a brush.
  4. Working with one tortilla at a time, add ½ cup filling to one side of the tortilla and fold in half.
  5. Arranged prepared quesadillas on a baking sheet and brush or spray with oil.
  6. Bake on center rack for 15 minutes until golden brown and crispy.
  7. Serve with remaining sour cream, guacamole and fresh pico de gallo.
