When we think of comfort food, we turn straight to melted cheese, every time. And what better vehicle for melted cheese is there than the humble baked quesadilla? I have a long history with homemade baked chicken quesadillas. We grew up eating them, but our love for tortillas and cheese grew exponentially in our teen years. Back then, cheese quesadillas were often a (gasp!) microwaved affair, but these days we prefer them baked. The cheese gets perfectly molten in the oven, and there's just no substitute. You’ll definitely want to serve them alongside some of our other Super Bowl favorites come game day. If your oven is occupied, try our stovetop chicken quesadillas!

What Is A Quesadilla?

Quesadillas originated in Mexico in the 16th century, and means a tortilla stuffed with savory filling. Here in the U.S. though, many Americans—us included—hear the word "quesadilla" and expect a lot of cheese melted inside of a folded flour tortilla. While this may not be authentically Mexican—in Mexico City, you'd never expect cheese in your quesadilla—our cheese-laden, Tex-Mex take on the dish is super delicious in its own right.

How Do You Make a Good Chicken Quesadilla?

The key to an amazing chicken quesadilla recipe is the seasoning and the addition of any great melting cheese that you love. For us, Monterey Jack is the absolute best cheese for quesadillas because it melts beautifully and has a milky, mild flavor that complements the chicken and toppings that we serve with these baked quesadillas. We also use one of our favorite pantry staples to give this homemade quesadilla an addictive smoky, spicy flavor: canned chipotle peppers. Finely chop them, then add them to a bowl with shredded chicken, shredded cheese, and sour cream. Mix it all together and the result is the best quesadilla filling ever.

How to Bake Quesadillas in the Oven:

What we LOVE about this ultra easy quesadilla recipe, is that there is no frying involved. When making baked chicken quesadillas in the oven you can avoid standing over the stove and go straight to cooking ten cheesy, mouth watering, perfectly toasted homemade quesadillas at once that go from oven to instant party platter in no time.

  1. Mix cooked, shredded chicken with cheese, sour cream, chipotle peppers and seasoning in a bowl.
  2. Fill half of a tortilla with ⅓ cup of that delicious filling.
  3. Fold the quesadilla in half.
  4. Arrange 4-5 prepared quesadillas on a large baking sheet.
  5. Brush tortillas with olive oil.
  6. Bake at 425°F for 15 minutes.

Baked Chicken Quesadillas

Ingredients

  • 8-10 (10-inch) flour tortillas
  • 4 cups shredded chicken, about 1.5 lbs
  • 1 tablespoon chipotle peppers in adobo sauce, depending on how hot you like it (1 or 2)
  • salt, to taste
  • 2 cups sour cream, divided (16oz)
  • 2 cups shredded pepper jack cheese or mozzarella
  • olive oil, for brushing

Method

  1. Preheat oven to 425°F.
  2. In a large bowl stir together the shredded chicken, 1 1/2 cups sour cream, chipotle pepper, shredded cheese and salt to taste.
  3. Line 2 large baking sheets with parchment paper. Grease the parchment with cooking spray or apply olive oil with a brush.
  4. Working with one tortilla at a time, add 1/3-1/2 cup filling on one side of the tortilla and fold in half.
  5. Arrange quesadillas on prepared baking sheet and brush or spray with oil.
  6. Bake on center rack for 15 minutes until golden brown and crispy.
  7. Slice into wedges, serve with remaining sour cream, guacamole, salsa or fresh pico de gallo.

    can these be assembled ahead of time snd baked when quests come? WIill the flour shells get soggy

    It would probably get soggy if you let it sit too long before baking.

    Yes, however we never think reheated quesadillas are as good so just a fair warning that it won't be as good as fresh!

    Made these tonight for easy and fast dinner. I had leftover southwest shredded crockpot chicken and taco rice that I used, and just added the cheese. Didn't have any parchment paper, so I stayed the baking sheet with olive oil. Didn't have a pastry brush either, so I folded up a paper towel and poured the EVOO onto the towel, than applied it to the top of the quesadilla. Flipped them halfway through and removed from oven about 4 minutes from suggested time because we're in high altitude. They turned out AMAZING!!! Perfectly crunchy with just the right amount of filling. Definitely keeping this in rotation. Many Thanks
