This Baileys Chocolate Bundt Cake is perfect for any occasion that requires a little sweetness, but we created it especially with St. Patrick’s Day in mind. I’ve been seeing green desserts all over my pinterest feed, but here at The Modern Proper, we aren’t really into desserts dyed to match our green attire. But chocolate and booze? Now that we can get behind.

I’m lucky enough to be located close to my favorite one-stop shop Fred Meyer. To be honest, I feel like it’s a bit dangerous being able to pick up any ol’ thing I want at the drop of a hat, but for this recipe it sure came in handy. I was able to grab all the cake essentials, including the Jameson Irish Whiskey and Bailey’s Irish Cream at my local store.

If you have either of these liquors hanging around in your cabinet and you’ve been wondering “what do you do with leftover Bailey’s Irish Cream?” (besides enjoying it over ice like I like to do), this simple “dump cake” is the answer. It’s called a dump cake (I know, it’s not the most flattering of names), because you literally just dump the ingredients into a bowl, mix it with a hand mixer or kitchenaid, and pour it into a bundt cake pan. It’s as simple as that.

I got this recipe from a dear friend who got it from one of her family friends. The original version has vodka and Kahlua in it, more oil and no butter, and is completely delicious. But, wanting to mix it up a bit and make the cake all the more festive for St. Patty’s day, I swapped out the liquors and went with butter for added richness.

My Fred Meyer store carries Simple Truth Organic butter, which I love not only for it’s reasonable price (because sheesh guys, butter is expensive!), but because I also feel better buying organic when I can and Fred Meyer’s Simple Truth Brand makes that easy.

If you have extra time on your hands you could also make this homemade Irish cream which would be perfect served over ice alongside this cake, in place of a cold glass of milk. It is St. Patrick’s Day after all….

Baileys Chocolate Bundt Cake

Serves 10


1 box yellow cake mix
6 oz. package instant chocolate pudding mix
½ cup sugar
4 eggs
1/2 cup cooking oil
1 stick Simple Truth Organic Butter, melted
¾ cup water at room temp
¼ cup Jameson Irish Whiskey
¼ cup Baileys

Baileys Glaze

1 cup powdered sugar
½ cup Baileys


  1. Preheat oven to 350°.
  2. Mix cake ingredients together with electric mixer for about 4 minutes, just until the lumps are gone, but taking care not to beat in too much air.
  3. Grease a bundt cake pan. Pour cake mixture in.
  4. Bake for 50 to 60 minutes. (Until knife inserted comes out clean)
  5. Combine ingredients for glaze to dissolve sugar. Set aside.
  6. Remove cake from oven and let cool in pan for 15 minutes.
  7. Remove from pan and poke holes in top and sides with fork.
  8. Drizzle glaze over tops and sides.
  9. Let cool for at least another 20 minutes before serving.
