This Easy Chocolate Bundt Cake made with Baileys liquor is perfect for any occasion that requires a little sweetness, but we created it especially with St. Patrick’s Day in mind. It’s moist, delicious and quick, making it the perfect treat anytime.  

Chocolate and booze? Now that is something we can get behind. You know what else we can get behind ?...the simplicity of is a “dump cake” made with both of those delicious ingredients.

WHAT IS A DUMP CAKE?

A dump cake is a cake made using a box of store bought cake mix as the base. It’s a brilliant way to make a quick and easy dessert.

I’m lucky enough to be located close to my favorite one stop shop Fred Meyer. I was able to grab all the cake essentials, including the Jameson Irish Whiskey and Bailey’s Irish Cream at my local store. 

If you have either of these liquors hanging around in your cabinet and you’ve been wondering “what do you do with leftover Bailey’s Irish Cream?” (besides enjoying it over ice like I like to do), this simple “dump cake” is the answer.

How to make a bundt cake

Now , can we talk about how fun it is to make a “dump” cake in a bundt pan? Bundt cakes are so impressive, ly pretty and there are so many different mouldld designs to choose from! . Here are a few tips and tricks to make using this cake pan successful!: 

  • Grease the pan with an oil -based cooking spray to ensure that the cake comes out without sticking.
  • After you pour the batter into the pan, tap the pan a few times on the counter to ensure there are no air bubbles that will compromise the cake design of the bundt pan. 
  • Swap some oil for butter! Most cake mixes call for oil, but in this cake we opted for the richness of butter! and the results were wonderfully tasty.

My Fred Meyer store carries Simple Truth Organic butter, which I love not only for it’s reasonable price (because sheesh guys, butter is expensive!), but because I also feel better buying organic when I can and Fred Meyer’s Simple Truth Brand makes that easy.

If you have extra time on your hands you could also make this homemade Irish cream which would be perfect served over ice alongside this cake, in place of a cold glass of milk. It is St. Patrick’s Day after all….

Baileys Chocolate Bundt Cake

Serves 10

Ingredients

1 box yellow cake mix
6 oz. package instant chocolate pudding mix
½ cup sugar
4 eggs
1/2 cup cooking oil
1 stick Simple Truth Organic Butter, melted
¾ cup water at room temp
¼ cup Jameson Irish Whiskey
¼ cup Baileys

Baileys Glaze

1 cup powdered sugar
½ cup Baileys

Method

  1. Preheat oven to 350°.
  2. Mix cake ingredients together with electric mixer for about 4 minutes, just until the lumps are gone, but taking care not to beat in too much air.
  3. Grease a bundt cake pan. Pour cake mixture in.
  4. Bake for 50 to 60 minutes. (Until knife inserted comes out clean)
  5. Combine ingredients for glaze to dissolve sugar. Set aside.
  6. Remove cake from oven and let cool in pan for 15 minutes.
  7. Remove from pan and poke holes in top and sides with fork.
  8. Drizzle glaze over tops and sides.
  9. Let cool for at least another 20 minutes before serving.
