Once you’ve made this easy homemade pancakes mix we’re pretty sure you’ll want to always have it in your cupboard. Pancakes follow a basic formula of the following ingredients: flour, leavening agent (this is what gives them their fluff!) and liquid to blend it together (we use milk and a touch of vanilla to enhance flavor). We also use an egg, which contributes a little bit of everything (in this case structure, leavening, and moisture). What Can I Use If I Run Out of Pancake Mix?

We’ve all been there. The bacon (or breakfast sausage) is already sizzling, the coffee’s made, and you’re ready to start the pancakes. But you realize you’re out of pancake mix. Don’t stress! Our homemade pancake mix recipe is super easy to make and will have your breakfast back on track in no time. It’s also great to make by the batch, and yields 36 (4-inch) pancakes. So now you can go back to picturing this: the smell of melting butter, and the sound of pancake batter hitting the hot griddle. Follow along to make your own homemade pancake mix.

What Are The Ingredients For Pancakes Made From Scratch?

After you’ve made the homemade pancake mix, which is basically whisking together five common dry pantry ingredients, you’re a few steps away from a stack of fluffy, delicious pancakes.

For the pancake mix, you’ll need this handful of ingredients from the pantry:

  • Flour

  • Sugar

  • Baking Powder

  • Baking Soda

  • Sea Salt

To get from pancake mix to a stack of pancakes, you’ll need the following ingredients, mostly from the fridge :

  • Whole milk

  • 1 large egg

  • Vanilla extract

  • Butter

  • Maple syrup

Get That Griddle Going!

  1. In a large mixing bowl, combine the prepared dry pancake mix with milk, egg, and vanilla.

  2. Get the griddle nice and hot over medium heat. Too hot and you’ll burn those ‘cakes, not hot enough and your pancakes will never cook. You’ll know it’s ready when the butter bubbles nicely on the surface of your skillet or griddle.

  3. Pour 1/4 cup of pancake batter into the skillet. Repeat until the pan is filled, but the pancakes are not touching.

  4. Pro-tip: pancakes are ready to flip when bubbles begin to form on the surface of the pancake (about three minutes).

  5. Cook the pancake on the other side until golden brown and no longer gooey in the center, about 1 to 2 minutes longer.

  6. Once your stack is ready for your crowd of eager pancake-eaters, serve with (more) butter and plenty of maple syrup.

Homemade Pancake Mix

Ingredients

  • 6 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 tablespoons baking powder
  • ¾ teaspoon baking soda
  • 1 tablespoon sea salt

To make 6 (4-inch) pancakes

  • 1 cup homemade pancake mix
  • ⅔ cup whole milk
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 4 tablespoons salted butter, plus more for serving
  • Maple syrup, warmed, for serving

Method

To make the pancake mix:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined. Transfer the mix to an airtight container. Will keep in a dry place for up to 6 months.


To make 6 (4-inch) pancakes:

  1. In a large bowl whisk together 1 cup of the dry pancake mix, milk, egg, and vanilla, until just combined.

  2. In a large skillet set over medium heat, add 2 tablespoons of the butter. Once the butter is beginning to bubble, pour ¼ cup of the pancake batter into the skillet. Repeat until the skillet is filled, but the pancakes are not touching.

  3. Once bubbles begin forming on the top and the edges of the pancake batter, flip the pancake, about 3 minutes. Continue cooking until the pancake is golden brown and cooked through, about 1 to 2 minutes longer. Repeat with the remaining butter and pancake batter.

  4. Serve the pancakes warm with butter and maple syrup.

    Have you used this mix to make waffles? And if so, how do the wet ingredients change? An extra egg? Add some oil?

    We have not tested this as waffles.

    I would sub with a 1:1 GF flour. We use bobs red mill!

    I made this recipe with half whole wheat flour and half regular flour, and used Jaggery or tapa dulce as the sweetener... they came out perfect! Just thought I would share.
