Homemade Pancake Mix

Ingredients
- 6 cups all-purpose flour
- ½ cup granulated sugar
- 2 tablespoons baking powder
- ¾ teaspoon baking soda
- 1 tablespoon sea salt
To make 6 (4-inch) pancakes
- 1 cup homemade pancake mix
- ⅔ cup whole milk
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 4 tablespoons salted butter, plus more for serving
- Maple syrup, warmed, for serving
Method
To make the pancake mix:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined. Transfer the mix to an airtight container. Will keep in a dry place for up to 6 months.
To make 6 (4-inch) pancakes:
In a large bowl whisk together 1 cup of the dry pancake mix, milk, egg, and vanilla, until just combined.
In a large skillet set over medium heat, add 2 tablespoons of the butter. Once the butter is beginning to bubble, pour ¼ cup of the pancake batter into the skillet. Repeat until the skillet is filled, but the pancakes are not touching.
Once bubbles begin forming on the top and the edges of the pancake batter, flip the pancake, about 3 minutes. Continue cooking until the pancake is golden brown and cooked through, about 1 to 2 minutes longer. Repeat with the remaining butter and pancake batter.
Serve the pancakes warm with butter and maple syrup.
