Holiday Bread Basket

Classic rolls, savory popovers and flat bread with herbed whipped feta! Who says you have to choose just one bread to make for your Holiday table?

In the words of Oprah Winfrey “I love bread.” I'm serious. I lurve it. Like a lot. And you're kidding yourself if you don't agree that there's nothing better than warm, flaky carbs (aka the gateway drug to butter and the cleaning utensil of choice to make sure nothing goes to waste on your Thanksgiving plate).

If you’re in charge of hosting Thanksgiving this year and are overwhelmed with the amount of planning and research that goes into pulling off such an anticipated feast, we’ve got you've covered this season with a variety of sides and mains that we’ll be featuring in the coming weeks . But, if you're not hosting the big day and were given the task of “just bringing the bread”...I'm just going to go out there and say it...chances are someone has little faith in your cooking abilities. Well, jokes on them this year, because I'm about to help you blow them away.

Holly and I have searched high and low to find the best (and I really mean the best) breads worthy of of your time in the kitchen and most importantly, your Thanksgiving tables. Here, we're featuring three favorite recipes we've found (authored by some amazing bakers who put serious effort into their development); a flatbread fried in herb oil with herb-whipped feta for dipping, black pepper and nutmeg popovers (holy yum), and seriously the best classic dinner rolls I've ever bitten into (their creator claims to have worked on its recipe for 6 years and you can taste it in every flaky buttery bite).

Overwhelmed with the options? Don't worry, you don't have to chose just one. Don't let bread be the “boring” dish on the table, rather serve a basket of assorted breads with varying textures and flavors like we did here. An entire basket of warm, soulful carbs served alongside some good butter (yes there is “good” butter and “bad” butter), whipped feta and flaky salt for serving will have everyone singing your praises, and more importantly, stuffing their mouths with all that carb-loaded goodness.

Holiday Bread Basket

  • Serves: 6
  • Prep Time: 25 min
  • Cook Time: 20 min
  • Total Time: 45 min

Herbed Flat Bread

  • 2 1/2 cups All-purpose flour
  • 2 tsp Dry active yeast
  • 1 tsp Salt
  • 1 cup Water, warmed to 110°f
  • 4 tsp Olive oil (plus more for frying)
  • 1 tbsp Fresh chives, chopped
  • 1 tbsp Fresh rosemary, chopped
  • 1 tbsp Fresh thyme, chopped

Whipped Herb Feta

  • 8 oz Feta
  • 4 oz Cream cheese
  • 1/2 tsp Black pepper
  • 1 tbsp Fresh chives, roughly
  • 1 tbsp Fresh rosemary, roughly
  • 1 tbsp Fresh thyme

  1. Place flour, yeast, and salt into a mixing bowl and add water and oil. Mix for 1 minute. Move dough (it will be sticky) on a floured surface. Flour the top of the dough and cover with a towel. Let rest for 10 minutes.
  2. After 10 minutes, preheat a cast iron skillet to med-high with a light coating of olive oil.
  3. Divide dough into eight piece and press each piece until ⅛ inch thick.
  4. Cook the dough pieces in the hot pan for about 1 minute per side, remove and sprinkle with fresh herbs. The pan may need to be re-oiled with each dough piece.
  5. In a food processor add all of the ingredients for the whipped feta. Blend on high until smooth. About 4 minutes. Can be stored for up to a week.
