Egg Roll in a Bowl

My quick egg roll in a bowl recipe is a simple one-pan meal! With cabbage, turkey and carrots, sautéed with egg roll seasonings, it’s my favorite low carb lunch or quick dinner.

My easy turkey egg roll in a bowl recipe is everything you love about egg rolls, cooked in a single skillet instead of rolled and fried! Lean ground turkey is the protein-packed base for lots of cabbage and carrots, just like in classic egg roll filling. Soy sauce, garlic and ginger stay true to all of the classic Asian egg rolls flavors we love, all we’ve taken away is the rolling and frying.

Egg roll in a bowl is one of my favorite “sneaky” healthy dinners. Most of the time I cut major time corners by buying a bag of coleslaw mix so that I can skip cutting the cabbage and carrots! I don’t eat gluten anymore, so I use tamari or coconut aminos to keep it gluten free. To make this egg roll in a bowl keto, leave off the wonton strips. Want more quick, one-skillet dinner ideas? Egg Roll Bowl Ingredients

  • Ground turkey. It’s so easy to keep ground turkey on hand in the freezer and I love to use it instead of ground beef as a leaner, healthier protein for weeknights.  
  • Cabbage. Cabbage is such a workhorse! A cabbage will keep in the fridge for two months, so it’s such an easy vegetable to keep around. I grab one every time I shop. 
  • Carrots. Another sturdy fridge staple, and a classic egg roll filling ingredient. Sweet and crunchy, don’t skip it!
  • Soy sauce. I use low-sodium soy sauce because it tastes about the same as the full-sodium stuff. 
  • Brown sugar. Just a hint of sugar to give it that slightly sweet-savory element that egg rolls have. If you’re being super strict about carbs, it’s fine to leave it out.  
  • Toasted sesame oil. There’s really no sub for sesame oil in this egg roll recipe! It’s a rich, unique flavor that makes Asian food of all kinds taste the way it should. 
  • Wonton strips. I have heard from some folks that these can be tricky to find. No worries! If you can’t find them, it’s OK to skip them. 
  • Onions, garlic and ginger

How To Make Egg Roll in a Bowl 

  1. Sauté ground turkey, onion, ginger and garlic in a skillet until the turkey is cooked through. Yes, this is a one-pan dinner! AKA, the best kind. 
  2. Add the vegetables! Cabbage, carrots, soy sauce, sugar and remaining sesame oil and cook for another few minutes until everything is softened and delicious!
  3. You’re done! Time to garnish and gobble! Egg roll in a bowl is a contender for the easiest dinner ever, right?

Tips & Short Cuts

  • If you use ground pork or beef, be sure to drain off any excess fat before adding the veggies. 
  • Use pre-shredded coleslaw mix in place of the carrots and cabbage and you’ve got basically ZERO prep.
  • For a really busy day, use jarred or frozen minced ginger or garlic (Trader Joe’s frozen ginger anyone?!). You can get dinner done in 20 minutes flat if you use bagged coleslaw mix and pre-minced garlic and ginger.

What to Serve With Egg Roll in a Bowl

As a simple, speedy, low-carb or keto dinner recipe, egg roll in a bowl can stand all on its own. But you can dress it up, bulk it up, or spice it up by: 

  • Serving the cabbage and turkey egg roll bowl mixture over rice. 
  • Serve the egg roll bowl filling over a bed of lettuce if you want to keep things super low-carb or keto! 
  • Serve it as a hearty, quick side dish along with other Chinese restaurant favorites, like kung pao chicken, dry-fried green beans, or sesame chicken
  • Top the egg roll bowl with sriracha or sambal oelek to spice things up! 
  • Garnish with fresh scallions and sesame seeds for extra texture.

    Ingredients

    • 1 ½ tablespoons toasted sesame oil
    • 1 pound ground turkey
    • 1 small yellow onion, diced, about 1 cup
    • 1 tablespoon minced fresh ginger
    • 1 tablespoon minced garlic
    • 2 cups shredded green cabbage
    • 1 cup shredded carrots
    • ¼ cup low sodium soy sauce
    • 1 teaspoon brown sugar
    • Sriracha or chili oil, for serving
    • 1 (3.5 ounce) bag wonton strips
    • ⅓ cup minced green onions
    • Sesame seeds, for serving

    Method

    1. In a large skillet, heat 1 tablespoon of the oil over medium-high heat. Once the oil is glistening, add the turkey, onion, ginger and garlic and cook, breaking the meat up with a wooden spoon, until the turkey is browned and the onion is softened, 8-10 minutes.

    2. Stir in the cabbage, carrots, soy sauce, sugar and remaining ½ tablespoon sesame oil. Cook, stirring occasionally, until the cabbage and carrots are tender, about 4-5 minutes.

    3. Divide the turkey and cabbage mixture into 4 bowls and drizzle each with the sriracha. Sprinkle with wonton strips, green onions and sesame seeds before serving.

      Is this gluten free?

      It is not gluten free. It can be made gluten free if you use gluten free tamari in stead of soy sauce and skip the wonton strips.

      Hi this sounds delicious can it be eaten cold? Also how long will it last in the fridge?

      Sure! It will last up to 3 days in the fridge and I would add the wontons right before eating so that they don't get soggy.

      YUM!
      We used ground pork and firm tofu because its what we had on hand. Skipped the wonton and green onions to avoid a trip to the grocery store. We served it over a white rice/cauli rice mix. We will definitely be making this again!

      I couldn't find wontons at the store so I added an 8oz can of water chestnuts for some more crunch. I also served it with some rice.
