Ground Turkey Stir-Fry

Lean ground turkey gets a quick stir fry with a host of veggies for a healthy, easy ground turkey stir fry recipe that my family has adored for years! The key to this healthy meal is a super easy stir fry sauce made of just three ingredients: coconut aminos, sesame oil, and chile paste. If you love this quick stir fry, try an egg roll bowl next.

Why I Love This Recipe

  • It’s fast! Using mostly pantry and freezer ingredients, it comes together in about 15 minutes. 
  • It’s versatile! I’ve made so many variations of this recipe I don’t even know where to start! I’ve made a vegetarian version with tofu, and added all kinds of veggies. You can definitely get creative. 
  • It’s extremely healthy. Ground turkey is a fantastic source of lean protein, and then I load it up with cauliflower, mushrooms, ginger and garlic for even more nutrition.  
  • It is GREAT leftover: Our family eats the leftovers for up to 5 days, and I swear it only gets better as it sits.

Key Turkey Stir Fry Ingredients

  • Ground turkey : We usually have ground turkey in the freezer, but you could swap in ground beef, ground chicken, or even crumbled tofu for an equally delicious stir fry.
  • Cauliflower rice: One of my favorite hacks is to use frozen cauliflower rice! It saves you a ton of work, and you can dump it frozen right into the pan.
  • Shiitake mushrooms: Extremely healthy and rich with umami, you can find these fresh in the produce area, or you can often find them frozen.
  • Cabbage: Cheap, super healthy, and it keeps in the fridge for ages, cabbage is my go to weeknight veggie for so many reasons.
  • Aromatics: Fresh garlic, fresh ginger, scallions. 

 

For the stir fry sauce: 

  • Coconut aminos: These have a hint of sweetness that I love, but if you want to save a little money, use soy sauce and a pinch of brown sugar instead.
  • Sesame oil: Nutty and rich, a little goes a long way.
  • Chile paste: Sambal oelek or sriracha both work well.

How To Make + Tips

  1. I usually start steaming rice before I start the stir fry because it comes together so fast. 
  2. Stir fry the ground turkey, cauliflower rice, and mushrooms for 8-10 minutes.  
  3. Add the cabbage, garlic and ginger, and cook for another couple of minutes to wilt the cabbage. 
  4. Stir in the oil, chili paste and aminos. 
  5. Serve!

Description

This super easy ground turkey stir fry was built for busy weeknights. Tried and true, it’s a beloved family recipe that’s healthy, fast, kid-friendly and delicious.

Ingredients

  • 1 pound ground turkey
  • ¾ cup cauliflower rice
  • ¾ cup shiitake mushrooms, very finely chopped
  • 3 garlic cloves, minced
  • 1 cup finely chopped cabbage
  • 2 teaspoons grated fresh ginger
  • ¾ cup coconut aminos
  • 2 teaspoons sesame oil
  • 2 teaspoons sambal oelek or Sriracha
  • 3 green onions, finely chopped
  • ¼ cup finely chopped fresh cilantro, (optional)
  • ¼ cup finely chopped fresh basil, (optional)

For serving (optional)

  • Cooked rice
  • Large romaine leaves
  • Matchstick cucumbers
  • Fresh mint leaves
  • Soy sauce

Method

  1. Add the ground turkey, cauliflower rice, and mushrooms to a large non-stick skillet. Cook over medium-high heat, stirring often, until the turkey is browned, about 8 minutes. Stir in the garlic, cabbage, and ginger and cook until the garlic is fragrant and the cabbage is softened, about 2 minutes more.

  2. In a small bowl, combine the coconut aminos, sesame oil, sambal oelek, and green onions. Once the cabbage is softened, pour the sauce over the turkey mixture and stir to combine. Stir in the cilantro and basil and cook for about 2 minutes. Remove from the heat.

  3. Serve the stir-fry with the rice, romaine, cucumbers, mint, cilantro, and soy sauce, alongside, if desired.

Notes

If you don’t have coconut aminos, you can use a mixture of ¾ cup low sodium soy sauce and 2 teaspoons brown sugar.
