Ground Turkey Stir-Fry

Ingredients
- 1 pound ground turkey
- ¾ cup cauliflower rice
- ¾ cup shiitake mushrooms, very finely chopped
- 3 garlic cloves, minced
- 1 cup finely chopped cabbage
- 2 teaspoons grated fresh ginger
- ¾ cup coconut aminos
- 2 teaspoons sesame oil
- 2 teaspoons sambal oelek or Sriracha
- 3 green onions, finely chopped
- ¼ cup finely chopped fresh cilantro, (optional)
- ¼ cup finely chopped fresh basil, (optional)
For serving (optional)
- Cooked rice
- Large romaine leaves
- Matchstick cucumbers
- Fresh mint leaves
- Soy sauce
Method
- Add the ground turkey, cauliflower rice, and mushrooms to a large non-stick skillet. Cook over medium-high heat, stirring often, until the turkey is browned, about 8 minutes. Stir in the garlic, cabbage, and ginger and cook until the garlic is fragrant and the cabbage is softened, about 2 minutes more.
- In a small bowl, combine the coconut aminos, sesame oil, sambal oelek, and green onions. Once the cabbage is softened, pour the sauce over the turkey mixture and stir to combine. Stir in the cilantro and basil and cook for about 2 minutes. Remove from the heat.
- Serve the stir-fry with the rice, romaine, cucumbers, mint, cilantro, and soy sauce, alongside, if desired.
Notes
If you don’t have coconut aminos, you can use a mixture of ¾ cup low sodium soy sauce and 2 teaspoons brown sugar.
