Three Magic Words: Garlic Oyster Mushrooms
These oyster mushrooms cooked in garlic butter are a perfect side dish. They’re similar to our dry cooked mushrooms, and once you’ve prepared mushrooms using this technique, you’ll find yourself making them to accompany everything from our Italian Style Pot Roast to our Classic Pot Roast. Ingredients For Sauteed Mushrooms With Garlic
Oyster mushrooms, cleaned, ends trimmed, and quartered
Kosher salt
Extra-virgin olive oil
Salted butter
Garlic cloves
Parsley
How To Make Garlic Butter Mushrooms
Heat a large skillet over high heat. Add the mushrooms in a single layer, being careful not to overcrowd, and cook, working in batches if necessary, until mushrooms begin to just brown, about 7 minutes.
Reduce the heat to medium-high. Sprinkle the mushrooms with salt and cook, undisturbed, until mushrooms start releasing their moisture, about 5 minutes. Resist the urge to stir them! Add the olive oil and cook, stirring occasionally with a wooden spoon, until mushrooms are tender and edges are golden brown, about 8 minutes more.
Add the butter to the pan. Once the butter melts, add the garlic and cook (now you can stir) until garlic is fragrant and mushrooms are coated, 2-3 minutes.
Sprinkle mushrooms with parsley and serve.
How to Store Leftovers + Tips
The best way to clean dirt off of mushrooms is with a dry paper towel or with a mushroom brush.
Start with a dry pan. It seems counterintuitive, because we always start cooking with oil or butter. When you start with a dry pan, mushrooms will release their moisture, and then you can add flavor with butter and other additions.
Is it better to cook mushrooms in butter or oil? We start with olive oil, because it has a higher smoke point than butter. We add the butter towards the end of the cooking time, as a finishing touch to coat the mushrooms.
