Cozy Winter Squash Soup in Under an Hour!

This easy butternut squash soup can go from grocery bag to dinner table in less than an hour! With minimal hands-on time required, it makes the ideal meal for a busy family. It’s just what you need for a quick, cozy dinner at home, and as an added bonus, it will make your house smell like gloriously autumnal. Thank you golden butternut squash, garlic and thyme!

The secret to making this soup perfectly smooth and delicious is that it is made in our new Ascent Series Vitamix Blender. What Spices Do You Add to Butternut Squash Soup?

There are only three types of butternut squash soup worth having:

While curried butternut squash soup is legit delicious, for this recipe we are leaning hard into classic fall flavors. Nutmeg and thyme compliment the roasted sweetness of the seasonal fall produce like crisp, sweet apples and buttery orange squash. Some people like to add sage and cinnamon, but we wanted to keep the flavors clean and light. In our experience both sage and cinnamon can be overpowering in a soup like this.

How Do You Make Butternut Squash Soup From Scratch?

Making soup from scratch is super easy—we promise! Our butternut squash soup recipe starts with whole ingredients (apples, squash, onion, garlic) that are simply given a rough chop and then roasted in the oven. Once everything is beautifully browned, we transfer it to our Vitamix blender. It sounds too easy, we know, but there is no catch. This is truly the best butternut squash soup recipe out there, and the fact that it’s also the easiest is just the cherry on top. Once you make it, you’ll be hooked on this warm and flavorful fall dinner!

Ingredients You’ll Need to Make Butternut Squash Soup.

You could pretty much just shop for everything you’ll need at the farmers market. And that’s our favorite thing to do this time of year! Here’s what you’ll need:

  • Fresh produce: butternut squash, onions, apples, and fresh garlic.
  • Herbs and spices: thyme, nutmeg, cayenne, salt and pepper
  • Olive oil & cream (or coconut cream to make it vegan!)
  • Pepitas (aka toasted pumpkin seeds) for a little crunchy texture.

A kiss of heavy cream makes our butternut squash soup recipe silky and smooth, but you can easily swap it with some canned coconut milk to make it a vegan butternut squash soup. However, if it’s health you’re worried about, a little heavy cream doesn’t undo the fact that this is a veggie-loaded, healthy butternut squash soup!

How Do You Make Roasted Butternut Squash Soup?

This soup comes together in just two quick steps!

  1. Take all the squash, apples, onion and garlic and place them on a rimmed baking sheet. Toss it all in a healthy amount of olive oil, then pop it in the oven! We roast all these perfectly fall ingredients together with thyme.
  2. Transfer your roasted goodies to the blender, and blend!

Tips for Making Butternut Squash Soup:

  • If you don’t have time to peel a butternut squash, you can buy it already cubed at the grocery store.
  • Use a sweet red apple varietal like Fuji, Gala, or Honeycrisp. This will add a lovely sweet note to your soup.
  • Top this soup with pepitas (pumpkin seeds) for an extra special crunch.

What Else Can I Make in a Vitamix?

This time of year you can find us constantly making the following things in our Vitamix:

  • Any creamy soup you love! Think tomato soup, pea soup, lentil soup. The list goes on and on.
  • Salad dressings and marinades are also constantly putting our Vitamix blenders to good use and we use them on just about everything!
  • And of course our daily smoothies (using this smoothie cup).

Which Vitamix Can Make Hot Soup?

You can make hot soup in any Vitamix! Say what? I know, it’s crazy and it’s awesome. How does it work? The friction of their blades is the trick to making steaming hot soup in under 10 minutes, right in the container, no stove required. It’s yet another way to ensure that this recipe hits your table in under an hour!

Description

Creamy butternut squash soup made with sweet apples, garlic, and thyme is the perfect cozy, light dinner.

Ingredients

  • 1 (2½- to 3-pound) butternut squash, peeled, cut into 1½ inch cubes (about 6 to 8 cups)
  • 1 yellow onion, quartered and layers separated
  • 2 sweet apples, such as Fuji, Gala, or Honeycrisp, cored and sliced
  • 8 garlic cloves
  • 3 sprigs fresh thyme, plus a few leaves for serving
  • ¼ cup extra-virgin olive oil
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon freshly cracked black pepper, plus more for serving
  • 2 cups vegetable or chicken stock
  • ½ cup heavy cream, plus more for serving
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon cayenne pepper
  • Pepitas, for serving (optional)

Method

  1. Preheat the oven to 400°F with a rack in the center position.

  2. On a rimmed sheet pan, combine the squash, onion, apples, garlic and thyme. Drizzle with the olive oil and season with 1 teaspoon of the salt and ¼ teaspoon of the black pepper. Toss to coat.

  3. Roast until the squash is fork-tender, 30 to 40 minutes.

  4. Meanwhile, in the last 5 minutes of roasting, bring the stock to a boil in a small saucepan, then reduce to a simmer and keep warm.

  5. Remove the sheet pan from the oven. Discard the thyme stems, leaving the leaves on the pan. Transfer all the roasted vegetables to a high-speed blender. Add the hot stock, cream, the remaining ½ teaspoon salt, the remaining ¼ teaspoon black pepper, the nutmeg, and cayenne. Let cool briefly. Secure the lid, keeping the lid plug slightly vented.

  6. Turn the blender on and slowly increase to the highest speed. Blend until smooth. 5 to 6 minutes.

  7. Pour into bowls and serve topped with a drizzle of cream, thyme leaves, pepper and pepitas, if using.

don't have vitamix, will food processor work?

Sure! Or any high powered blender. Hope you enjoy Christine.

  • Kate

Lovely looking recipe! What is the white shown on top?

Just a drizzle of heavy cream!

  • Michele

If you don't have a powerful blender, can you just put the roasted veggies/apples into the soup pot and use an immersion blender? Thanks.

Yes! That should work just fine.

  • Caitlin

Does this do well in the fridge if i were to make a day ahead?

    Yes! Wonderfully well! Enjoy.

  • Roni

I don't have any fresh thyme and all I have is ground thyme what would you recommend I do?

Use less! The dried ground thyme will be stronger, so start with half the amount called for and adjust for taste as you go.

I love MPs recipes so when I had a craving for a warm fall soup I decided to give this one a go. Let me start off by saying I think my BN Squash was a bit bigger than recommended, but the flavor was still amazing. Came out a bit spicy I think which I am not usually sensitive to. Not sure if theres a bit too much cayenne? Mine is fresh and new so I can definitely taste that coming through. Maybe if I made it again Id reduce the amount of cayenne or regular pepper it calls for. Also quite thick. I thinned mine out with stock like other reviewers mentioned. Didnt measure, just added it in a bit at a time and then did the full 5-6 minute mix and it came out great and smooth. Overall very good but might need to make a few tweaks!

Glad you enjoyed it Isabella! Definitely change up the cayenne levels to suit your spice preference.

The flavor was awesome! But I had to add a cup or two of vegetable broth. After I pureed it it was so thick, like butter.

Glad you enjoyed it! Happy to hear the vegetable broth helped remedy the thickness. We'll take another look, we didn't get a thick consistency like that.
