Nutmeg and thyme compliment the roasted sweetness of the seasonal fall produce like crisp, sweet apples and buttery orange squash. Some people like to add sage and cinnamon, but we wanted to keep the flavors clean and light. In our experience both sage and cinnamon can be overpowering in a soup like this.

How Do You Make Butternut Squash Soup From Scratch?

Making soup from scratch is super easy—we promise! Our butternut squash soup recipe starts with whole ingredients (apples, squash, onion, garlic) that are simply given a rough chop and then roasted in the oven. Once everything is beautifully browned, we transfer it to our Vitamix blender. It sounds too easy, we know, but there is no catch. This is truly the best butternut squash soup recipe out there, and the fact that it’s also the easiest is just the cherry on top. Once you make it, you’ll be hooked on this warm and flavorful fall dinner!

Ingredients You’ll Need to Make Butternut Squash Soup.

You could pretty much just shop for everything you’ll need at the farmers market. And that’s our favorite thing to do this time of year! Here’s what you’ll need:

  • Fresh produce: butternut squash, onions, apples, and fresh garlic.
  • Herbs and spices: thyme, nutmeg, cayenne, salt and pepper
  • Olive oil & cream (or coconut cream to make it vegan!)
  • Pepitas (aka toasted pumpkin seeds) for a little crunchy texture.

A kiss of heavy cream makes our butternut squash soup recipe silky and smooth, but you can easily swap it with some canned coconut milk to make it a vegan butternut squash soup. However, if it’s health you’re worried about, a little heavy cream doesn’t undo the fact that this is a veggie-loaded, healthy butternut squash soup!

How Do You Make Roasted Butternut Squash Soup?

This soup comes together in just two quick steps!

  1. Take all the squash, apples, onion and garlic and place them on a rimmed baking sheet. Toss it all in a healthy amount of olive oil, then pop it in the oven! We roast all these perfectly fall ingredients together with thyme.
  2. Transfer your roasted goodies to the blender, and blend!

Tips for Making Butternut Squash Soup:

  • If you don’t have time to peel a butternut squash, you can buy it already cubed at the grocery store.
  • Use a sweet red apple varietal like Fuji, Gala, or Honeycrisp. This will add a lovely sweet note to your soup.
  • Top this soup with pepitas (pumpkin seeds) for an extra special crunch.

Butternut Squash Soup

Ingredients

  • 1 (2.5-3 lb) butternut squash, peeled, cut into 1 ½ inch cubed
  • 1 yellow onion, peeled and quartered
  • 2 sweet apples, (fuji, gala, honeycrisp), cored & sliced
  • 8 garlic cloves
  • 3 sprigs thyme
  • ¼ cup olive oil
  • 1 ½ tsp salt
  • ½ tsp freshly ground pepper
  • ¼ tsp nutmeg
  • ¼ tsp cayenne pepper
  • ½ cup heavy cream (or coconut cream if you are vegan or whole30)
  • Pepitas (optional)

Method

  1. Heat oven to 400°F.
  2. Place the cubed squash, onions (separate the layers), apple slices, garlic cloves and sprigs of thyme on a rimmed baking sheet. Drizzle veggies with olive oil and season with 1 teaspon salt and 1/2 teaspoon pepper.
  3. Roast 30-40 minutes until squash is fork tender.
  4. Transfer all the roasted veggies (discard the stem from the thyme) along with the cream to your vitamix blender. Add salt, pepper, nutmeg, cayenne pepper and secure lid.
  5. Turn the blender on and slowly increase to the highest speed. Blend for 5-6 minutes or until heavy steam escapes from the vented lid. Serve immediately.

    I don't have any fresh thyme and all I have is ground thyme what would you recommend I do?

    Use less! The dried ground thyme will be stronger, so start with half the amount called for and adjust for taste as you go.

    I love MPs recipes so when I had a craving for a warm fall soup I decided to give this one a go. Let me start off by saying I think my BN Squash was a bit bigger than recommended, but the flavor was still amazing. Came out a bit spicy I think which I am not usually sensitive to. Not sure if theres a bit too much cayenne? Mine is fresh and new so I can definitely taste that coming through. Maybe if I made it again Id reduce the amount of cayenne or regular pepper it calls for. Also quite thick. I thinned mine out with stock like other reviewers mentioned. Didnt measure, just added it in a bit at a time and then did the full 5-6 minute mix and it came out great and smooth. Overall very good but might need to make a few tweaks!
