This Burrata Salad Is a Little Savory and a Little Sweet

It’s that time of year when berries are bursting out of their baskets, and burrata is super fresh and flavorful. We’re here to tell you to carpe that diem next time you see these ingredients at the market. Once you slice into burrata, you’ll understand why it is quite possibly the perfect cheese. It’s slightly less firm and just a touch more luxurious than the mozzarella you know and love, because it’s been enriched with fresh cream. Burrata cheese pairs well with almost all of summer’s bounty, but we especially love it as a beautiful centerpiece in this summer burrata salad with crunchy arugula and bright berries and a drizzle of balsamic vinaigrette.

What Is Balsamic Vinaigrette Dressing Made Of?

A well-balanced vinaigrette is tangy and acidic, with a base of oil and vinegar. We add a touch of sweetness with honey, texture with minced shallot, and a little bite from the stone-ground mustard. Trust us, you’ll be looking for things to dip into this simple and flavorful dressing. Our balsamic vinaigrette salad dressing recipe calls for white wine vinegar and white balsamic vinegar, which results in an easy vinaigrette that is lighter and crisper than one made with a dark balsamic vinegar.

This Might Be The Best Way to Serve Burrata, Not Kidding

You’ll be in fresh berry and cheese heaven in no time. Here’s how to make your new favorite burrata salad:

  1. Whisk all of the ingredients for the dressing together in a small bowl.

  2. Toss arugula and berries with half of the dressing and transfer to your serving dish.

  3. Using your hands, gently pull the burrata into pieces and scatter over the salad.

  4. Finish with a jazzy sprinkle of pistachios and a final drizzle of dressing all over!

Burrata Salad with Summer Berries & Pistachios

Ingredients

  • 5 ounces arugula
  • 8 ounces burrata
  • 2 cups mixed berries such as blackberries, strawberries or blueberries
  • 1/4 cup roughly chopped pistachios

Balsamic Vinaigrette

  • 2 tablespoons stone-ground mustard
  • 2 tablespoons honey
  • 2 tablespoons white wine vinegar
  • 2 tablespoons white balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 small shallot, minced, about 2 tablespoons
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Method

  1. In a small bowl whisk together all of the ingredients for the vinaigrette.

  2. In a large bowl, toss the arugula with the berries and half of the dressing. Transfer the salad to a large platter or large shallow bowl.

  3. Hold the burrata over the salad and break it into pieces, scattering them as you go.

  4. Sprinkle with pistachios and drizzle with extra dressing.

    Would a flavored vinegar work, substituted for the white balsamic? I'm feeling Champagne vinegar or Raspberry....
