Burrata Salad with Summer Berries & Pistachios

Ingredients

  • 5 ounces arugula
  • 2 cups mixed berries, (we like blackberries, strawberries or blueberries)
  • 8 ounce burrata, drained, torn into even pieces
  • ¼ cup roughly chopped pistachios

Balsamic Vinaigrette

  • 2 tablespoons stone-ground mustard
  • 2 tablespoons honey
  • 2 tablespoons white wine vinegar
  • 2 tablespoons white balsamic vinegar
  • ½ cup extra-virgin olive oil
  • ½ medium shallot, minced (about 2 tablespoons)
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper

Method

  1. Make the vinaigrette. In a small bowl, whisk together the stone-ground mustard, honey, white wine vinegar, white balsamic vinegar, olive oil, shallot, salt, and pepper, until emulsified. 
  2. In a large bowl, toss together the arugula, berries and half of the dressing. Transfer the salad to a large platter or large salad bowl. 
  3. Top the salad with the burrata and pistachios then drizzle with desired amount of the remaining dressing.
