What is Olive Tapenade Made of?

Olive Tapenade is a briny, salty spread or dip made from olives. It usually contains an acid such as lemon juice, garlic, fresh herbs, and sometimes, anchovies. Across the Mediterranean you might find it on a mezze platter as a pre-dinner appetizer. In our baked cod with parsley olive tapenade recipe, we use:

  • Castelvetrano olives

Ingredients

  • 1.5 pounds cod filet
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon freshly cracked black pepper, plus more for serving
  • 1 cup minced Italian parsley leaves
  • ⅓ cup finely chopped castelvetrano olives
  • 2 anchovy filets, finely minced
  • 3 garlic cloves, finely minced
  • 1 tablespoon lemon zest (from one lemon)
  • ¼ cup lemon juice (from 2 lemons)
  • 1 ½ teaspoons red pepper flakes
  • ⅓ cup extra virgin olive oil

Method

  1. Preheat oven for 450.°F

  2. On a rimmed baking sheet lined with parchment paper, arrange cod filet. Season with 1 teaspoon of the kosher salt, garlic powder and ½ teaspoon of the black pepper. Bake on the center rack for 10 minutes.

  3. Meanwhile, in a medium sized bowl, combine parsley, olives, anchovy, garlic, lemon zest, lemon juice, remaining teaspoon of salt, red pepper flakes, remaining ½ teaspoon of black pepper and olive oil.

  4. Using a large spatula, transfer fish to a large platter. Top with parsley olive mixtures and more pepper. Serve immediately.
