I got the cooler down from the attic last weekend, and pulled the cover off the grill so I guess summer is officially, finally, here. And by summer I mean full-on grilling season.
In truth, I sometimes grill even in the dead of winter, because where I live it’s not usually all that cold. Still, grilling when it’s 50 degrees and drizzly is not the same as grilling in the glorious summer sunshine with all your nearest and dearest lounging around you in the backyard. Give me a hot grill (charcoal or gas, I really don’t care which!) and an icy cold beer, or maybe even some margaritas, chips and guacamole on a gingham-covered table, popsicles melting on the sidewalk and all the littles running through sprinklers.
I want to be outside, soaking up summer from first light until sunset, so outdoor grilled dinners are basically all I want to eat from Memorial Day straight through til Labor Day. Though I’ve rarely met a grilled dinner I didn’t love (that smoky char makes everything taste good), the recipes I’ve shared below are my absolute, hands-down favorites. From steak to chicken breast, pork, seafood, vegetable sides and even a few surprises, they’re the iconic grilling recipes of summer in my house, and there’s something for every occasion.
