How To Make A Frittata

Now that you’ve gathered all the ingredients to make the best frittata recipe ever, you’re ready to get started actually making it! This frittata works best using an oven-proof skillet because you’ll start cooking the frittata on the stove top, and then you’ll move it to the oven to finish cooking. Here’s how to make a perfect frittata:

  1. Sauté spinach and asparagus in your trusty oven-proof skillet in a little olive oil. Once the spinach is wilted, remove the asparagus (but leave the spinach).
  2. Keep the pan over the heat and pour in the whisked eggs.
  3. Top the eggs and spinach with cheese, dill, chives and lay the asparagus spear on top (this isn’t for any real culinary reason—it just looks prettier this way).
  4. Bake! The frittata will be done in about 15 minutes, but keep an eye on it. You want a teeensy bit of wiggle in the top, but not much.
  5. Slice like a pie and serve with extra chives and a dollop of crème fraîche.

Spring Asparagus Frittata With Crème Fraîche

Ingredients

  • 2 tbsp olive oil
  • 4 cups spinach leaves
  • 8-10 asparagus spears, ends trimmed, thick ones cut in 1/2 lengthwise.
  • 8 eggs
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground pepper
  • 2 cups gruyere or comte, grated
  • 3 tbsp fresh dill, finely chopped
  • 2 tbsp fresh chives, finely chopped
  • 8 oz Crème Fraîche

Method

  1. Preheat oven to 375°F.
  2. In a 10” nonstick, ovenproof skillet (such as cast iron) heat olive oil over medium heat. Add spinach and asparagus and cook until spinach has wilted. The asparagus will not be fully cooked. Turn off heat and remove asparagus and set aside on a plate.
  3. In a medium bowl whisk eggs with salt and pepper. Carefully pour the eggs into the hot pan over the spinach. Layer the asparagus on the eggs, followed by the cheese, dill and then finally chives.
  4. Bake the frittata for 12-18 minutes, or until eggs are cooked through.
  5. Slice like a pie and serve with extra chives and a dollop of creme fraiche.
