Every time we see asparagus on sale at our local grocery store, we stock up and head to the dairy section. After grabbing Gruyère, crème fraîche and a few fresh herbs, we are ready to roll! How To Make A Frittata

Now that you’ve gathered all the ingredients to make the best frittata recipe ever, you’re ready to get started actually making it! This frittata works best using an oven-proof skillet because you’ll start cooking the frittata on the stove top, and then you’ll move it to the oven to finish cooking. Here’s how to make a perfect frittata:

  1. Sauté spinach and asparagus in your trusty oven-proof skillet in a little olive oil. Once the spinach is wilted, remove the asparagus (but leave the spinach).
  2. Keep the pan over the heat and pour in the whisked eggs.
  3. Top the eggs and spinach with cheese, dill, chives and lay the asparagus spear on top (this isn’t for any real culinary reason—it just looks prettier this way).
  4. Bake! The frittata will be done in about 15 minutes, but keep an eye on it. You want a teeensy bit of wiggle in the top, but not much.
  5. Slice like a pie and serve with extra chives and a dollop of crème fraîche.

Asparagus Frittata With Crème Fraîche

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 4 cups spinach
  • 8 to 10 Asparagus spears, ends trimmed
  • 8 eggs
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper
  • 2 cups grated Gruyère or comte
  • 3 tablespoons finely chopped fresh dill
  • 2 tablespoons finely chopped fresh chives
  • 8 ounces crème fraîche

Method

  1. Preheat the oven to 375°F with a rack in the center position.

  2. Heat the olive oil in a 10-inch, ovenproof skillet over medium heat. Once the oil is glistening, add the spinach and asparagus and cook, stirring, until the spinach is wilted, about 5 minutes. Transfer the asparagus to a plate.

  3. Meanwhile in a medium bowl, beat the eggs with salt and pepper. Pour the egg mixture over the spinach and stir to incorporate. Sprinkle on the Gruyère, dill and chives.

  4. Cook, undisturbed, until the edges are set, about 2 minutes. Top the frittata with the asparagus spears, transfer the skillet to the oven and bake until the eggs are set, about 12-14 minutes. The eggs should barely move when you jiggle the pan.

  5. Slice into wedges. Dollop with the crème fraîche, then serve.
