Last week, Natalie and I packed up some humble ingredients and made a trek to the house of Eva Kosmas Flores. Eva has been one of our favorite sources of inspiration for many years now, and we are so happy to call her a dear friend as well. Recently, Eva put the finishing touches on a beautiful new studio. And while we all wait anxiously for the big reveal, we got a chance to step through the doors and experience some of the joy of cooking and styling in this beautiful space.

Shirred Eggs with Leeks

We have done a few really fun partnerships with Eva over the last few years and some group shoots that are always such a delight. Back in the spring we co-created the most amazing grilled cheese sandwich with rhubarb, goat cheese, and caramelized spring onions. That sandwich remains one of my very favorite ways to usher in spring.  We also have very fond memories of coming together to create collaborative meals with Eva and some of our other favorite bloggers. If you haven't had the chance to see those posts you can check them out here and here. Because we love working together so much, we knew we wanted to put together a little something extra special for the holiday season.

Once we set out with the theme of brunch, Eva mentioned making a saffron star bread. Natalie and I knew we needed to make something savory to accompany such a lovely breakfast bread and we came up with these simple shirred eggs, baked with cream and lots of extra goodies. The two dishes pair perfectly together and would make for the most glorious Christmas breakfast or brunch. Shirred Eggs with Leeks

Shirred Eggs with Leeks

Ingredients

2 tbsp butter
2 small red bell peppers, thinly sliced
1 leek, white and light greens minced
1 bunch green onions, white and light green parts, minced
6 eggs
salt
pepper
2 oz Parmesan, grated
flat leaf parsley, chopped
chives, chopped

Method

Preheat oven to 375°

In a small skillet over medium heat melt 2 tbsp of butter. Add bell peppers, leeks and green onions. Sauté until peppers are tender. Remove from heat.

Set 6 buttered ramekins on a baking sheet and divide bell pepper mixture evenly between the dishes making a small "well" in each one for the egg. Top each dish with 2 tablespoons of heavy cream. Carefully crack eggs into the "well" and top with salt, pepper and grated parmesan cheese.

Bake for 10-15 minutes. Until whites are barely set and yolks are still runny. (Eggs will continue to cook for a couple minutes after removing).

Serve warm with crusty bread.
