It’s three o’clock, our kids are still napping and the sun is shining. As we hustle to accomplish all we can with what little time we have left we think of a great idea. The kind of idea that would possibly be found on the cover of Good Housekeeping circa 1962. A tray full of lemonade and a veggie platter cut and arranged so perfectly it could double as a family portrait with all that happy produce smiling right back at you. The kids wake up…and we, well, that idea is gone.

Forget the magazine cover, our kids are a sweaty hungry mess and we are staring blankly into the cupboards as they hang on our legs.


If it was up to us, our kids would only snack on carrots, apples, snap peas and other similar raw vegetables.

An occasional apple sauce or energy bar is likely to get handed to them nine times out of ten because they just need something…like now.

In an effort to resolve the snacking crisis, this salad has moved to the top of our list. As soon as the four o’clock witching hour begins we start pulling out the fixings. Cucumber, snap peas and dates to name a few. As we chop everything on the same cutting board, we fill the grabby little hands that are pawing the edge of the counter desperate to score something good. It seems to take the edge off.

The feta and bacon are optional, but really assist in turning this salad into a meal. However, since this holiday weekend appears to have no rain in the forecast, we will likely pop open a beer, throw a few sausages on the bbq, eat way too much, and call it a remembrance celebration dinner.

Chop Salad With Herb Yogurt Dressing

Serves 6

Dressing

1/2 cup green onions, chopped
1/3 cup fresh basil, loosely packed
1/3 cup fresh mint, loosely packed
2 garlic clove, roughly chopped
1/4 cup lemon juice
2 tsp anchovy paste
1 cup plain greek yogurt
1/4 cup olive oil
1/4 tsp ground pepper
1/4 tsp kosher salt

Salad

1/2 lb asparagus spears, 1 inch chopped or shaved into ribbons
1 english cucumber, diced
1 red pepper, diced
1 cup cherry tomatoes, halved
1 cup sugar snap peas, roughly chopped
2 avocados, diced
1 cup dates, roughly chopped
16 oz thick cut bacon, roughly chopped, cooked
1 cup frozen peas, thawed
1 cup fresh feta, crumbled

Method

  1. Place all the dressing ingredients in blender. Puree on high for 2 minutes until smooth and creamy.
  2. Reserve a little bacon and feta for garnish.
  3. In a shallow serving dish, toss all salad ingredients with ¾ cup of dressing. Add more dressing a little at a time.
  4. Once everything is incorporated well, sprinkle a little bacon and feta over top.
