And what exactly is a chopped salad? Well, the base of this chopped salad recipe is simply that! Salad. Specifically, a variety of fresh and crunchy produce—think asparagus, cucumber, red pepper and sugar snap peas. It’s a fantastic way of incorporating all of those spring and summer veggies into your daily routine. When paired with a creamy Greek yogurt dressing and studded with bacon, dates and feta cheese, it's truly a divine sort of dish. Here’s how to make a chopped salad:

  1. Chop all your produce: asparagus, cucumber, red pepper, cherry tomatoes, and sugar snap peas. Toss them together in a bowl.
  2. Add all the goodies: sweet peas, feta, dates and bacon.
  3. Sprinkle with cilantro for good measure.
  4. Drizzle and then toss with the perfect herby, lemony, garlicky Greek yogurt dressing.

Chopped Salad With Herb Yogurt Dressing

Ingredients

  • 1/2 lb asparagus spears, 1 inch chopped or shaved into ribbons
  • 1 english cucumber, diced
  • 1 red pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup sugar snap peas, roughly chopped
  • 2 avocados, diced
  • 1 cup dates, roughly chopped
  • 16 oz thick cut bacon, roughly chopped, cooked
  • 1 cup frozen peas, thawed
  • 1 cup fresh feta, crumbled

Dressing

  • 1/2 cup green onions, roughly chopped
  • 1/3 cup fresh basil, loosely packed
  • 1/3 cup fresh mint, loosely packed
  • 2 garlic clove, roughly chopped
  • 1/4 cup lemon juice
  • 2 tsp anchovy paste
  • 1 cup plain greek yogurt
  • 1/4 cup olive oil
  • 1/4 tsp ground pepper
  • 1/4 tsp kosher salt

Method

  1. Place all the dressing ingredients in blender. Puree on high for 2 minutes until smooth and creamy.
  2. Reserve a little bacon and feta for garnish.
  3. In a shallow serving dish, toss all salad ingredients with ¾ cup of dressing. Add more dressing a little at a time.
  4. Once everything is incorporated well, sprinkle a little bacon and feta over top.

    Can i use soy sauce instead of anchovy paste?

    You can just leave it out!

    Hi! Any thoughts on a substitute for the anchovy paste?

    Hi Kelly. Feel free to leave it out if you are a vegetarian, but if you are not, I would suggest a little bit of fish sauce. If you are vegetarian, feel free to leave it out! The dressing will be plenty flavorful still.

    I've made this salad twice now...sticking exactly to the dressing recipe while doing my best with what fresh veggies were available at the store. Brought it to a party and everyone loved it. It may be my new favorite salad dressing...so fresh!
