Baked Honey Mustard Curry Chicken
We’ve got another great foolproof chicken recipe coming your way. It’s an easy one pot honey mustard curry chicken that basically cooks itself. Chicken breasts or thighs are baked in a sweet and spicy Dijon mustard sauce with broccoli florets (or other veg of your preference). This is great on its own, or served with crusty Sourdough Bread or fluffy Rice on the side.
Ingredients For Easy Honey Mustard Curry Chicken
This recipe requires a brief tour around the pantry. Gather the following for the most delicious sauce chicken has ever met:
Cayenne – A great way to add zing, like in this Homemade Old Bay Seasoning Blend.
Garlic powder – Different from fresh garlic, garlic powder is made from dehydrated garlic and has a subtle sweetness.
Yellow curry powder – The perfect warming spice, which we also use in our Cauliflower Curry recipe.
Raw apple cider vinegar – Miracle ingredient, and perfect amount of acid for this sauce.
Honey – It’s not honey mustard without it.
Mustard – We call for both whole grain (for texture) and Dijon (for that tingly warmth you get from things like wasabi).
How To Make Honey Mustard Curry Chicken
Brown the chicken in a large ovenproof skillet or braiser.
Make the sauce in a small bowl.
Toss the broccoli with olive oil and salt.
Pour the honey-mustard sauce over the chicken and turn to coat.
Add the broccoli to the skillet.
Transfer the skillet to the oven until the broccoli is tender and the internal temperature of the chicken reaches 165°F on an instant-read thermometer.
Serve with bread, rice, or creamy Roasted Garlic Mashed Potatoes.
How to Store Honey Mustard Curry Chicken + Tips
Eat these leftovers within a few days. They’re great on top of a salad, or as part of a sandwich. If you can’t get to them in a timely manner, you can freeze for up to three months in an airtight container.
You can leave the broccoli out or swap it with another veggie for variety.
